Exhaust Hoods and Ansul Systems

I've acquired a 30' RV I'm planning to convert to a mobile kitchen. The rig is made of fiberglass. What model of exhaust hood (about 5' of grill/flat top service is planned) should I install? What model of Ansul System? I'm finding some used hoods, but I'm concerned about weight. Thanks in advance for your guidance. Julie

It depends on your local codes but I have heard from all the oficials here in CT that in a mobile unit no ansul is required. The Ansul system is to control a fire for the general public - no public in your mobil unit - no requirement. The hood size should be 6" wider than the cooking units. Some units in my area don't even have an actual hood around the cook area just the baffles and a fan behind them. These units are s.s. walls inside but I have put a real hood in my trailer because I want to control the grease vapors from making my walls nasty. Just be safe and ask your local officials. They like it when you consult with them first before deciding and fighting with them later.

In Massachusetts you need a hood if you have a grill, a hood and ansul if you have fryers. The purpose of the ansul isn't just to protect the public but also to protect employees.
