1. MFDVs must operate from an approved commissary that meets all applicable sanitation and safety standards.  The commissary must have potable water and adequate facilities for disposal of liquid and solid waste.  The MFDV must report to the commissary to store or replenish supplies, clean utensils and equipment or dispose of liquid and solid waste.
 
 
 
I apologize if this makes me look like a n00b (ha, imagine) but I don't yet live in Florida and I plan to launch my business in about a year and a half. Food vending (what a shock, huh?) And I thought I'd acquaint myself with the details of the rules and healthcodes etc. etc.
 
How do you go about keeping with this regulation? Do you literally build your own base, your own commissary from which to prepare some foods, and to dump wastes? I thought I might be able to use any pilot/flying j or dump station for dumping my waste water.
 
Googling commissaries for rent in Florida turns up a couple small responses that don't seem like they'd be very fruitful..
 
I wouldn't mind a tidbit of insight right now =)

      your best bet is to find a restaurant, church, etc. with a commercial kitchen, they are wanting potable water supply, place to drain your gray water ( grease trap), and if your going with a CART you'll need a place to store your stuff and wash your utensils every night.
