FOOD TRUCK LINK THREAD Tue, 09/27/11 12:06 PM (permalink)
Ok, Jody, and Lorna wanted a section just for food trucks so I'm starting a thread just for links about FOOD TRUCKS.
This is not a thread for DIY how to's but a thread on the latest current links about food trucks, including, news about cities that do allow food trucks, what's being served on FTs and general information on the food truck industry.

Please don't post here if your wanting to know if you should start a food truck or how to start a food truck.

But please do post here links that pertain to the food truck industry. Give a brief explanation about the link and the link.

From Lorna, Latest news, Industry news, code compliance, marketing & Promotions etc, go here
http://www.mobilefoodnews.com/
Thank you.

There are many food truck blogs out there.
They tend to deal with local area food trucks.
      Here's some of them:
      http://www.ilovefoodtrucks.com
      http://www.findlafoodtrucks.com/blog/
      http://newyorkstreetfood.com/
      http://blogs.gwhatchet.com/btb/2010/09/25/where-were-eating-d-c-food-trucks/

      http://miamifoodtrucks.com/
      http://www.santaanita.com/specialevent/2011/santa-anita-food-truck-festival
      There's plenty more.
This industry is real and will only continue to grow.
The economics of opening a food establishment will drive the business.
The variety of foods make it interesting for the consumer.
Customers are drawn to the uniqueness of it all.
Who ever thought that Twitter would play such an important role in the development of the Food Truck industry.
      Tweet and they will come!!
BTW, Tweeting also drives business to B & M places too.
Are you tweeting your daily specials?
Are you working at building your tweeter followers?
Food Trucks are the most exciting thing to hit the food industry since Fast Foods.
      It's that big!
So if you're in a B & M facility you better figure out a strategy to combat the competition because there will be one rolling into your turf soon!

This site covers our scene here in Atlanta. They sponsor about half of the Food Truck Events and where very instrumental in developing the street food culture in Atlanta.
          www.atlantastreetfood.com/
There is another non-profit group that holds about 3 Food Truck Events each week.
I hope to start with this group next Monday.

I checked out some of the other sites. My computer is a little slow and it took awhile for all the advertisements to load.

Sure! Why not. The only difference is what moves it. The concepts are the same. Same Basics apply.

Southernsmoke, trailers are OK, including ours there are at least 5 others who operate out of food carts (that’s what we like to call them) with the other food trucks in Atlanta. We did one of our first events last night at the Howell Mill Food Truck Park in Atlanta. There were 5 trucks of various sizes and shape plus our cart. We are definitely going to have to think about better graphics. Next week we have been invited to set up outside a bar / concert hall. It has a small area for the food trucks and fortunately we fit in due to our size.

The Wild Dog, a lot of the cabinets and counters, shelves, etc in food trucks are fabricated on site by the builder. I am not sure of the area you live in, but you might be able to find a local fabricator who can make them for you. I am talking with one about redoing my counter space and adding shelving that will hold items will in transit. Right now I am using stainless steel prep tables and have flat shelves. When I move I have to remove everything and place it in boxes. Big PIA…

Nouvelle food trucks make fast food with slow values A New York minute is understood to be the interval of time between a Manhattan traffic light turning green and the guy in the car behind you honking his horn.

Lately it's also enough time for a hungry Manhattanite to get a substantial grass-fed beef hamburger, sourced straight from the La Cense ranch in Montana to its New York "Beef Burger Truck"; an iced, rainforest-friendly coffee from the Street Sweets truck, served up in a clear but biodegradable cup; or a cone of whole-bean vanilla ice cream made from hormone-free dairy and pure cane sugar, from the Van Leeuwen Ice Cream truck. And still have change left over from a $20.

They're part of a new wave of Net-savvy street food vendors across the country who are transporting the Slow Food movement's embrace of local, sustainably-grown, and uncommonly delicious ingredients beyond the confines of pricey restaurants into the nation's coast-to-coast love affair with street food. Call them the nouvelle food trucks.

Despite the grim state of the economy, urbanites are spending as much if not more of their food budgets on eating out than on cooking in. But rather than sit down to an expensive restaurant meal, upscale food trucks and carts have become go-to venues for quick, tasty meals. The nouvelle trucks are an even newer breed of mobile entrepreneurs, who specialize in whipping up relatively cheap fare that doesn't require eaters to chuck their health -- or their ethics -- in the gutter.

We are using a Ole Hickory CTO, we started out with a Lang 84 the first time but being it is not NSF we knew we would have to buy a different smoker so we went with a FEC100, then needed something a little bit bigger and bought the CTO

I usually post photos on our Face Book Page: Atlanta Tropical Breeze / Sandwich X Press.

We did a small Food Truck Event last Friday in Atlanta. We had a great time, didn’t make a lot but gave us some exposure. The event is held on an old vacant lot. There is enough room for about 7 food trucks.  They have about 8 picnic tables set up and a lot of the locals also bring out folding chairs. We where supposed to do another one last night at a bar in Atlanta. We got prepped and showed up but the event had been cancelled and no one told us. I guess there are some similarities between food truck events and festivals.

The key to being successful in the food truck business in Atlanta is to have a sponsoring restaurant and find your own locations. You really need about 2 to 4 great locations to set up during the week and fill in the gaps with the local food truck park promoters. After last nights debacle we are beginning to think there may be more food truck parks then food trucks or that some of the trucks know more about an event then we do. Outside of the bar scene or the neighborhood food truck parks most of the trucks make their living serving the lunch crowd.  This is the direction we want to go. Prep in the morning, serve lunch, cleanup and head to the house. We will still be able to do select festivals and some catering. If all else fails we can do what we did a few years back and promote our own festivals or food truck parks (We actually promoted a few markets) to create a venue for ourselves. It definitely creates more work for us but may be feasible.

The bottom line is if you are permitted, 100% legal, (Insurance, business license. Etc) and have locations or a route then you are in controlled of your destiny. Those of us who have being doing the festival circuits and working with promoters know that Murphy’s Law does exist.

Foodservice families' heirs launch food truck company October 12, 2011 | By Ron Ruggless

Jon Wagner, chief executive of Two Trucks LLC, and Dain B. Pool, company president, at The Butcher's Son truck

The scions of two foodservice companies have teamed up to create The Butcher’s Son food truck in Dallas, and expect to have five trucks rolling by February.

Jon Wagner, grandson of Johnsonsville Sausage founder Ralph Stayer, and Dain B. Pool, son of Lawrenceville, Ga.-based Pool’s Restaurant Group founder Dan Pool, have formed Two Trucks LLC. The company’s first Butcher’s Son truck debuted Oct. 5, and a second truck is scheduled to deploy on Oct. 17.

“Powered by Johnsonville” is printed on the side of the truck, but the menu goes beyond sausage to include breakfast dishes, such as pastrami with eggs and cheese on a roll. It also offers sandwiches, sausage plates, quesadillas, sliders, fries, and fried Oreo cookies and cake pops for dessert.

In the first week of operations, Pool said the most popular items have been a trio of sliders, a stuffed pepper, a double-bratwurst sandwich, a beef-andouille sausage po’boy and a braised-beef quesadilla.

Breakfast checks have averaged $3 to $5 during that time, and lunch checks have averaged $6 to $9, Wagner said.

Pool said the company envisions having as many as 200 company-owned trucks nationwide by 2014.

He also said teaming with an established sausage purveyor like Johnsonsville “offers us the highest quality products with the legendary flavor, also it gives the customer the peace of mind of a trusted brand.”

Pool said Pool’s Restaurant Group is providing a “background corporate structure, operational systems, accounting systems, training systems and a home-base headquarters.”

Pool’s Restaurant Group already has a number of food trucks on the road. It operates eight Gandolfo’s New York Deli trucks to complement its 50 brick-and-mortar locations in 15 states. Pool’s also owns the Petro’s Chili & Chips brand, which has 16 brick-and-mortar locations and one truck. Petro’s has three more trucks on the way.

Pool noted the growing food truck niche has a number of obstacles, including keeping the routes new and not saturating a certain location. In addition, finding employees to work a food truck can be a challenge.

“There is a ton of interaction with the customer, as well with the food. It takes a certain type of employee who can handle both,” Pool said.

Opportunities for the brand include a wide array of untapped areas for development and being mobile instead of in one location, Pool added. The truck, he said, is “a constant moving billboard for marketing and brand penetration.”

Two Trucks selected the Dallas area because of its foodie market and growing popularity of food trucks, Pool said.

“Customers are seeking gourmet options for a lower price because we do not have the overhead of many brick-and-mortars,” he said.
The Butcher’s Son’s target demographic spans 21- to 35-year-old male and female professionals, Pool said.

Get ready Jacksonville, FL!  A new food truck is hitting the streets.  Drew Cavins has been running the Mossfire Grill (one of the top 25 restaurants according to Jacksonville Magazine) for quite some time.  His brother, Curt Cavins joined him in the operation of the O’Brothers Irish Pub.  Together they have brought together the best of their two restaurants into the Bus’In Your Chops Food Truck.  It seems these brothers spend a lot of time together, I wonder even they even spend Thanksgiving and other holidays together?!?

The Bus’In Your Chops Food Truck brings together great dishes from both restaurants.   From the O’Brothers Irish Pub you get corned beef & cabbage empanadas, fish n’ chips, grilled pork sliders with Guinness BBQ sauce (of course), Irish fish tacos, and french fries with Dubliner sauce.

The Mossfire Grill contributes a taste of the Southwest with a great variety of tacos including fish (mahi-mahi blackened or jerk style), the Kapow Taco with shrimp or Temeh, Korean pork, and the BLTacos with cured pork belly, bacon, tomato, lettuce and chipotle sour cream.

There is a ton of food service experience behind this truck (and it is quite a good looking truck) along with a creative and expansive menu selection.   The launch of Bus’In Your Chops is sure to generate quite a bit of food truck excitement in Jacksonville!

Oh, and save room for dessert… fried pineapple fritters!

The Fast Foodie in Milwaukee, WI

The Fast Foodie in Milwaukee, WI is the only place you can get a Globaco!  What’s a Globaco?  Short for global taco, the “Globaco” takes a myriad of global cuisines and puts them in warm flour tortillas to make portable gourmet street food.

Imagine a Jamaican “Globaco” or a Puerto Rican “Globaco”…you can enjoy many diverse cuisines in one meal!

Fast Foodie’s creativity is impressive!  The “Taj Mahal” is a vegetarian-friendly mix of peas and potatoes in a zippy curry mixture, finished with shredded carrots for some crunch and a cooling yogurt sauce and served in a warm flour tortilla.  As you might have guessed this “global taco” features the flavors of India.

The “Big Sexy” Globaco  is a mixture of Pinchos (fried pork cubes marinated in Adobo), Arroz con Gandules (Puerto Rican Rice with Pigeon Peas), and Maduros(fried plantains). Finished with a secret sauce!

The “My Big Fat Greek” Globaco won’t make you big or fat! This Mediterranean delight starts with boneless, skinless chicken breast (or can be made vegetarian with chickpeas) that is marinated in Greek seasonings and adds diced fresh tomatoes, cucumbers, shaved red onion, crumbled feta, and a secret Greek vinaigrette.

A favorite menu item name at the Fast Foodie is the “You Jamaican Me Crazy.” Get it??  Come on, think about it.  Anyway, it’s a mixture of Jamaican Curried Beef and Rice with enough Scotch Bonnet hot sauce to wake up your mouth! This Globaco is finished with broccoli slaw and a special secret sauce.

Fast Foodie also has Globaco tributes to Italy and Korea on their menu.

As a side dish don’t miss the Fast Foodie Belgian Frites!  They are great on their own, or add on one of the dipping sauces: Cracked Pepper Aiol, Mayonnaise, Curry Ketchup, Sriracha Mayonnaise, Ranch or Wasabi Mayonnaise.

The Fast Foodie serves great big Globaco treats from a 24 foot trailer (pulled by a pick-up truck).  It’s hard to miss a trailer that large… and believe me you won’t want to, as Fast Foodie serves up great treats with international flair!
