PNWCHEF,
I agree completely with twinwillow, which is always easy to do, and others. She is a enhancement to the neighborhood, as I saw many people in the kitchen. Looking closely, you can see it was a Mexican restaurant before. Beats a For Lease sign.
I saw fresh burger patties cooked in a manner that is popular within the community. There is no doneness besides hot and cooked through. Nothing rare.
I lived in a 'Gated' area of NOLA, but that was where the best food was...
--desirable for us RoadFood Folks---
As a chef and a fairly long member of this site, I feel that you may be confused or out of touch with what a chef actually is, and what constitutes Roadfood.
Modesty prevents me from calling myself one, and I do not post my name screaming in capital letters saying that I am one.
