Fat On Crawfish ??

I was looking at a package of tails and it said it was "fat on" for recipes that needed crawfish fat. I need some help from the bayou. What the heck is fat on? What is fat off? I didn't think of crawfsh as portly.

    Not in the bayou but I was curious about this. I've used the frozen tail meat before but from what I read if you freeze the "fat" it turns rancid.

    Found this on the net.

    "What should be happening after you've consumed the tailmeat is capturing the lump of what we in Louisiana call crawfish fat. It's inside the thorax and is not gotten by sucking. You dig into the main body cavity with your little finger and out comes an orangish-yellowish lump of penultimate flavor. It's the crawfish liver and pancreas, according the Glen Pitre's classic reference, The Crawfish Book (U Press of Mississippi, '93). Creole cooks consider the hepatopancreatic material mandatory for crawfish etouffee."

    Fat on includes the "fat" or digestive "juices???" of the crawfish. It is yellow or pale yellow/green, depending on what the crawfish is eating at that time (season). Very rich and used in lots of Cajun recipes featuring crawfish. We used to be able to buy it in 1/2 pint containers when we bought frozen crawfish, but I haven't seen it lately.

    You can do without the fat, however. I love it, but my wife doesn't. If you need to replace the fat with anything try an equal amount of cream of mushroom or chicken soup. Not the same taste at all, but a good substitute.

    Dive, don't be a scared eater! Most Cajuns live to a ripe old age. Some parts of the Mud Bug may be the fountain of youth?

    Eat the tails, suck the heads, then eat the rest of the head, and you wont get fat!
