Favorite Homemade Sandwiches Fri, 02/14/14 10:33 AM (permalink)
Hi what are some of your favorite sandwiches and/or sandwich combinations, hot or cold?  Mine is a cold meatloaf sandwich with muenster cheese on rye toast.

I like the rainbow rye I get at HEB and top that with some good Boars Head pastrami and swiss with a good mustard, nuke it for thirty seconds till the cheese just starts to melt. Bahn Mi sandwiches are good but I'm not sure how to put one together.

I have never had a bahn mi.  Corned beef and pastrami is also a favorite of mine.

grilled cheese on seeded wheat or rye with ham, caramelized onions, and roasted red peppers.

I prefer a fairly sharp cheese

A combination hot corned beef and hot pastrami on rye with Swiss cheese and Batampte mustard.
Another is Genoa salami, sopressata, capicola, mortadella, sharp provolone, roasted red peppers and kalamata olives on a half loaf of Italian bread spread with olive oil, oregano and black pepper.

Hard to make at home and after several failed attempts I just gave up trying to make a semblance of a cheesesteak. But I happily ate my failures. Bahn Mi sandwiches are out of southeast Asia, Viet Nam  mostly and consist of a French baguette roasted pork with Julianne carrots, daikon  radish vinegary slaw.

Rye bread, buttered with sweet onion slices, brick or muenster cheese, braunschweiger, and a nice liberal helping of some sort of good German mustard.......

My favorite is one that I just made up one day. I sear a duck breast in butter to medium rare, set aside. Then I take some chilled cooked sliced beets, some crumbled bleu cheese, a few shelled walnut pieces, and just a smidge of mayo. Assemble by placing duck slices on a warm baguette, with the other ingredients. Really a different flavor combo.
Bahn Mi are also fantastic, but I can't make them at all like the Vietnamese grocery here in town. She gets the bread from Chicago daily, and uses a really great homemade pate'. Made fresh daily and they are $3.50! Guess where I eat lunch quite often?

That sounds great...I need to get a press. Have you ever had a Cuban? That's another one I can't make at home...gotta be at a little storefront in Miami I guess.

These all sound very good but I like something more basic. A fresh-picked tomato sliced onto a good crusty white bread; mayo, salt and pepper.

Something I used to make when I was young and not real smart was what we euphemistically called a cannibal sandwich on the boats. A slice of tomato, a slice of onion and a raw hamburger patty on white bread all salted liberally and black pepper. What the hell were we thinking?

My favorite homemade sandwich is pot roast. Made with leftovers from the previous night's pot roast dinner. Nothing fancy, just pot roast on white bread with butter, salt and pepper.

Wow you guys are really creative and giving me some ideas.  Brisketboy for some reason I have heard other people using raw hamburger I just can't remember where.  I don't know if it is a regional thing.

In WI we call the raw hamburger sandwiches "cannibal sandwiches"... in the part of the state I'm from, we serve raw ground ROUND on cocktail rye bread with raw onions and salt and pepper.

I still eat cannibal sandwiches. I mix my meat with some grated onion, salt, and pepper and then I just put a handful on a slice of bread and eat it. My father used to make them for us when I was little, and I've been eating it all my life.

This place was featured on Bizarre Foods with Andrew Zimmern. Preparation looked fantastic....the pork souse is great. Don't know if you have any of those stores in the Austin area.

If you have a press you can make a Cuban at home.  You can probably get close on the bread but it won't be the same as in Miami.  I once put Cubans on my lunch menu......they sold like mad.........I got really good bread, but it was not quite, quite the same.

That sounds great...I need to get a press. Have you ever had a Cuban? That's another one I can't make at home...gotta be at a little storefront in Miami I guess.

If you have a press you can make a Cuban at home.  You can probably get close on the bread but it won't be the same as in Miami.  I once put Cubans on my lunch menu......they sold like mad.........I got really good bread, but it was not quite, quite the same.
Yes...just like Po'boys and muffalettas don't taste quite the same out of New Orleans. I miss Cuban food...of all the wide variety of ethnic restaurants here there is not one Cuban...we have two Nepalese and an Ethiopian, but no Cuban. I still have my Cafe Bustelo much to my wife's chagrin. (she hates it)

I set myself up occasionally with this:

I go to my favorite local Asian market and from thier deli I get about a pound of fresh sliced roast turkey, sliced sharp cheddar cheese, and fresh portuguese rolls (it's New Jersey, Asian markets carry all that stuff and more). I usually have on hand at least one Trader Joe's Turkey Gravy in the vacuum pack.

This will provide me with Hot Turkey with gravy sandwiches for Monday Wednesday and Friday of a very good week.

Don't forget to add the pate' and cilantro.

I like thick sliced Boar's Head (white) American cheese grilled with tomato on well buttered multi-grain bread and a Ba-Tampte full sour pickle on the side.

Also, tuna salad made with imported Italian tuna in olive oil.
Of course with minced onion and plenty of Hellman's mayo and of course, the ubiquitous full sour Ba-Tempte pickle to accompany.

Grilled peanut butter.  Or better yet, my grownup version grilled almond butter on sourdough.

The ones I get here at the Vietnamese grocery have all the above plus some Asian lunch meat, jalapeno slivers and cucumber. She always puts extra pate' on mine.

Another good sandwich but hard to find because you need good and I really mean good head cheese. If I knew where to get quality head cheese here in Texas I would be all over it. On pumpernickel.

I betcha you could find some good Head Cheese out in the New Braunfels Area or that region of TX with the strong German influence out there
