    turkey quesadillas:

    stew 6 cups of diced turkey in a can of rotel.

    Once water is pretty much cooked off,
    Add  1 cup turkey to one 10" burrito laying flat
    add 3/4 to 1 cup shreded cheese.
    top with another burrito

    grill both sides. cut into six wedges.

    Makes 6 quesadillas of 6 wedges each. Serves 12. (3 wedges each)

    sides:
     
    black beans (I make mesquite black beans)

    saffron yellow rice


    have these toppings ready for quesadillas:

    sour cream
    herdez brand salsa
    guacamole (I made mine fresh)


    how to flip quesadilla at home when cooking on a skillet:

    slide quesadilla from skillet onto plate. 
    Put 2nd plate upsidedown over that plate. 
    Flip it over
    Slide from 2nd plate back onto skillet.

    I could only make one quesadilla at a time, so to keep warm and crispy while additional quesadillas are being made, I slid wedges on a cookie sheet, right after I cut them, into 250 degree (warm-low) oven until all quesdaillas were cooked.

      In the 10 qt pot now: the stock and meat from boiling down two carcasses, to which has been added garlic, zucchini squash, carrots, onions, celery, bell peppers and cilantro. All fresh, of course. Also a pound and a half of barley.

            There are some folks (even in my family) who do not like leftovers.  Sad but true.

                      I just took care of my left overs last night.  On Saturday I had friends over for a Post Thanksgiving dinner.  I fried a turkey, and for some reason, (I think everyone had their fill on Thursday) I had quite a bit left over....

                      I made two different dishes; Turkey Soup and Turkey Salad.

                      Soup Ingredients:
                      Carcass
                      Both Legs
                      Both Wings
                      Assorted other bones
                      Whole Spanish Onion, Quartered
                      Dried Parsley
                      Dried Oregano
                      Dried Basil
                      Garlic Powder
                      Onion Powder
                      Smoked Kosher Salt
                      Fresh Cracked Black Pepper.
                      Fresh Crushed Garlic
                      Sliced Baby Carrots
                      Sliced Celery
                      Egg Noodles.

                      About 3+ hours total cooking time, with the celery and carrots added after 2 hours.  And then the Egg Noodles added for about 15 min.

                      Salad Ingredients:
                      Diced Dark and White Meat
                      Diced Apple
                      Diced Celery
                      Sauteed Hot Pepper Mash
                      Light Raspberry Vinaigrette
                      Light Balsamic Vinaigrette
                      Light Mayo
                      Smoked Kosher Salt
                      Fresh Cracked Black Pepper

                        Not to me. I find turkey to be a most foul fowl. 

                        So, then don't eat turkey to begin with. Then there's nothing chuck down the disposal to begin with.

                          My wife makes about the most simple leftover turkey dish imagineable, and I love it!

                          She calls it Creamed Turkey.

                          Bascially: Turkey, canned cream of mushroom soup, rice, and canned peas. Heat, Mix, and serve. For my serving I usually dump the whole thing over a couple of pieces of rye bread.

                          The quantities depend on how much leftover turkey we have and how many leftover guests we have the next day.

                            Foodosaurus, that salad sounds amazing. I might add some cheese chunks to that myself.

                                That reminds of a staple in most Milwaukee homes in the "olden" days. You could buy a shoestring potato basket, usually near the deli, around this time of year. What you described (or a homemade  bechamel) went inside and it was always a huge treat. I haven't seen those baskets in years. They were identical in taste to those canned Pik-Nik potato snacks.

                                    Soup.

                                    turkey leftovers
                                    1 lb sliced carrots
                                    1 small celery bunch
                                    2 decent sized cooking onions
                                    1 bunch parsley
                                    6 qts turkey stock
                                    salt and pepper to taste
                                    1 tsp thyme
                                    1 bay leaf
                                    1 lb farelli noodles, or whatever; broad noodles, rice, or make some dumplings

                                    Cut up everything but the parsley. Toss it all, including the parsley but excluding the noodles, in the stock and simmer for an hour. Remove the bay leaf and the parsley. Cook the noodles and add to the soup if you want it thin; cook the noodles in the soup if you want it thick.

                                      I just made some "Turkey Jook" from a recipe I found over on Epicurious: Turkey Jook
                                       
                                      It's similar to a lot of the soup recipes listed here except that it is much more basic and has a very subtle flavor. Alone it is pretty bland but when you add the extra ginger, scallions, sesame oil, and soy sauce it's fantastic. Others in the household didn't hate it but don't care for the "slimy porridge-type texture of it. Personally that is my favorite part. Also, I unfortunately forgot to buy fresh ginger so I had to go with the ground stuff. I'm certain the fresh ginger would have made it much much better.

                                                  For those who have asked, recipe for Turkey and Sausage Gumbo:
                                                  in a large pot drizzle some olive oil and add:
                                                  one large onion - chopped
                                                  3-4 ribs of celery- chopped
                                                  sweet green or red or yellow bell pepper- chopped
                                                  when veggies are softened add about 1/2 cup of Tony Chachere's Instant Roux mix- I know you can make your own roux if you've a mind to, but this product has all the spices and adds the right amount of thickness to the gumbo.
                                                  Then I add chicken stock, or turkey stock, or just plain wateror any combo of those liquids- about 2-3 quarts.
                                                  Add your favorite andouille sausage- mine is Richards- all the way from Louisiana, and all your leftover turkey meat- and let it simmer for a good, long while. This time I even added some smoked ham hocks. It was gone in no time, and didn't taste like a turkey dinner- if you know what I mean. Of course, you can make this with chicken too, and I do at least two or three times a year.

                                                        Unfortunately I do it all the time. Who takes leftovers? Things go stale and go bad alot of times and I can't eat it all before it happens. You can't buy 1 hot dog at a time or bread by the slice. So many times a half pack goes bad.
