turkey quesadillas:
stew 6 cups of diced turkey in a can of rotel.
Once water is pretty much cooked off,
Add 1 cup turkey to one 10" burrito laying flat
add 3/4 to 1 cup shreded cheese.
top with another burrito
grill both sides. cut into six wedges.
Makes 6 quesadillas of 6 wedges each. Serves 12. (3 wedges each)

black beans (I make mesquite black beans)
saffron yellow rice
have these toppings ready for quesadillas:
sour cream
herdez brand salsa
guacamole (I made mine fresh)
how to flip quesadilla at home when cooking on a skillet:
slide quesadilla from skillet onto plate.
Put 2nd plate upsidedown over that plate.
Flip it over
Slide from 2nd plate back onto skillet.
I could only make one quesadilla at a time, so to keep warm and crispy while additional quesadillas are being made, I slid wedges on a cookie sheet, right after I cut them, into 250 degree (warm-low) oven until all quesdaillas were cooked.
