If its really convenient for the drivers ie: not a long walk, because time is always a big consideration even when getting chow AND the food is something to be yakked about. I think it sounds like a winner location. Along with the food a really good cup of coffee, large and cheap with thermos fills available would be a plus. keep the food driver friendly, something that can be eaten while driving but made fresh like fresh not frozen burgers or homemade meatloaf sandwiches. You dont mention sit down dining that can also be a plus.

Heck, I'd like to see both Italian spaghetti and Texas spaghetti on the menu.

The latter version being real Texas chili over spaghetti noodles and topped with a choice of onions, jalapenos, shredded cheese, sour cream, black olives, guacamole, etc.

I may be ducking tomatoes, but this suggestion is from a former Austinite.

      Wife of Riley-
What kinds of foods do you like to make? Whatever that is, that's what will sell the best because its made with skill and committment, not to mention love. That's what will project to your customers and they will line up to buy it.

If you are going to do the farm stand you might consider this:
        http://www.yourdelight.com/roundup_corn_cooker.htm
The link is to a corn cooker and heated display rotisserie....then you whip up some farm fresh butter with herb blends or blue cheese...I'm thinkin'a trucker might very well stop by for fresh cooked corn....

And here is one on Ebay for $399.00 plus shipping.

Roundup Corn Cooker/Heated Corn Warmer SLIGHT USE CCC20
          Item number: 250239457903
But I serve tons of corn year round and use a table top steam table, that runs around $160.00. with no shipping charge. I serve my corn with a bunch of butter and a dash of my rib rub.

Hi, Guys-been lurking for quite some time as I bought a STFU and am in the process of getting the biz going. But, as a truck driver, I wanna tell you truck drivers are STARVING out here! A full 85% of truck stops dont have a restaurant any more-most of the Mom & Pops are long gone. All the big chains have gone to fast food-you can have anything as long as it's Mickey D's, Wendy's or Subway! Those that do have restaurants have the standard canned menu-nothing new and waaay overpriced for what ya get. They keep changing the blood pressure regs and everybody's watching their diet, so offering better food choices would be a big hit. Next coming down the pike on the DOT physical is Body Mass Indexing-so everyboday's on a diet, too. And anything's better than those dried up day-old chicken quarters and fried okra. If that's all your local TS is serving, you could sell just about anything and have customers! Just having a good down-home dinner special every day and plenty of broadcasting on channel 19 would get ya plenty of business. Most of us hate truck stops anymore anyway-we just go there because we dont have a choice.
