Finding a commisary?

I'm exploring the possibility of starting a hotdog cart in NC. One of the requirements is to operate in conjunction with an established restaurant. My question is: how do you find a commisary? Should you just call any old restaurant? Are there lists of restaurants that already act in this capacity? Any advise would be welcomed. Thanks.

There's a lot of answers to that very question from a lot of previous posters. You might want to do a search, and then if you have specific questions give a shout.

Friends and more friends. Anybody who you know that knows a restrauant owner/deli/church. Or maybe a place that you and the family goes to alot and are friendly with the owners. Just get someone to accept and sign the papers. a small fee is also helpful to them. I had a place in Key West that charged me 100bucks a month. After a few months I relized a place I went to alot and ask the owners about it. The said yes for no charge.
