Ordered again from the Pig Pit yesterday after maybe a month or so, and for Upstate New York, I still think the quality is excellent - since my first post, I've become educated (through the roadfood reviews and all of the posts in the BBQ forum) about the various regional types of BBQ. Based on that knowledge, Tex's is authentic TEXAS BBQ - beef brisket is their speciality, and their homemade sauce is of the thick red Texas variety. Personally, I'd like to see some competition open around here, like a place with authentic clear-sauce North Carolina BBQ or mustard BBQ, but we're lucky to have anything like this at all around here. Got their BBQ Chicken and BBQ Beef in a Blanket, which is almost a tex-mex thing - basically a burrito stuffed with nothing but BBQ and sauce - and it was good stuff. Had a chance to talk with the owner while my order was being packaged, and he told me that this Cohoes, New York location has been the most successful location he's run - the store is in a former barber shop, and he also bought the old firehouse directly behind the place, which he uses as his smokehouse! This I would have never guessed, but it sounds inventive, at the very least. Also that in the past two years, he's done so well as to pay off both buildings, and that the sign that was on his roof a month back (12,000 pork sandwiches sold in 2006!) was absolutely true. If I had a complaint about last night's meal, it would be that the Beef Brisket seemed a little bit oversmoked for my taste, and that not enough BBQ sauce was used, but I'm still very
satisfied. Obviously the exact flavor varies on a day-to-day basis, as everything is smoked daily, and the owner may have left that batch in the smokehouse a little bit too long. Once again, I have no financial stake in this place, but as a resident of Cohoes, I'm glad it's here - true Texan BBQ in upstate New York is a rarity, as the only decent competition locally open year-round is Smokey Bones (yes, as in, the chain)
