    Based on your post, I made a detour to the Five Guys I had seen in Kendall (SW of Miami, 3 miles west of Pinecrest). I had checked the web site, knew what I wanted to order... and it wasn't open for business yet! Drat! Hamburgerus interruptus!

      A Five guys opened in St Pete shortly before we arrived this January. A local reviewer mentioned that they serve no hamburger rarer than "medium well done", so we never went.

      BTW:On the way up I-95 we had a hamburger and a shake at a place called Tastee Freeze. The hamburger was a precooked slab of something or other cooked to a rubbery consistency and as "tastee" as cardboard. The shake was nothing more than a low quality soft serve ice cream drawn directly from a machine.

        I had to laugh at the Burger Boys. There is another Five Guys rip off now operating in Dallas. Compare the web sires and the menus.

        In the late '80's I was a loyal patron of the first Five Guys location (now closed as it was just a walk-up) in a strip center on the NE corner of N. Glebe Rd. and Columbia Pike in Arlington, VA. Go Guys! Come to Dallas and kick Mooyah's thieving posterior!

          A Five Guys opened up near my jobsite in Allentown. I decided to give it a try.

          I ordered my cheeseburger($4.79) and watched the grillman smack it down as if he was made at it. The twin burgers came out crispy and dry. I order fried onions, peppers, mushrooms and jalapenos as toppings. I assumed the peppers were fried, they were not. The rest of the toppings were good.

          My opinion, nothing special and not worth the money. The wait was about 10 minutes from order to burger. About the same as the local diner down the road.

            I think you succeeded in explaining what my concern with Five Guys is. Franchisees will hire typical fast food help. They will not cook fresh food properly, and the customer will walk away dissatisfied.

              They're opening up in our area, too, and I've tried them a couple of times. They're pretty good for fast food, but we have local places that are so much better for the same price or less. The fries are quite good, but, seriously, do you need a 1/2 pound of potatoes to go with your burger?

                But the thing that (I think) they have going for them is that they can do it right, unlike the institutionalized mediocrity of BK and McD's, with their pre-cooked burgers and microwaves, etc. Perhaps some of the locations have franchisees who keep on top of things, and so the cooking is done right.

                I hope that the Five Guys being built up the road from me does it well. I am looking for something better than McDonald's, without sit-down, table-service pricing, for casual, weekday lunches.

                Influenced by RF, I have tried a couple of independent diners around my part of town, and have not been satisfied. One was downright awful - I was worried that I might get ill.

                  If I remember back in the old days at their single location they would cook them rare or med rare as you asked, but I'm sure they changed due to e-Coli fears.

                    True, if they could hear you over their blaring of DC-101, you could yell to the cook how you wanted it done! I'm sure the owners remember how some West-Coast e-coli deaths in the '80's nearly bankrupted Jack-in-the-Box and led to the closing of all their NOVA locations.

                    That was a walk-up which was closed as they began their initial expansion which included seating at King/Beauregard and then Springfield and Old Town.

                    As I hate soggy bread I wish they'd offer a "paper plate" option that does not involve wrapping the burger in foil to eat-ins.

                    BTW: if you're a restaurant frying "fresh" ground beef and don't cook the product until the juice starts to run clear, you're a fool. It does you no good to point to SYSCO which has a legion of lawyers to point back at you and/or to their anonymous processors: it's your hard-earned retail name on the line.

                    Cook it well. There is no other sane choice at this level of the restaurant biz.

                      I have been to several different Five Guys over the past couple years.I always found their food very good.However,the prices are getting a bit high for me.For a bacon cheeseburger,regular fries and large Coke,the bill was over $10.Too much for me to spend on lunch break.

                        I did a Travelin Man at a hot dog joint (business closed up), so I went a half mile west to the new Five Guys Burgers and Fries restaurant in the Shops of Midtown Miami center. This is a shopping center built on the grounds of an old train yard. There are new condos going up in the neighborhood, but the gentrification is not yet complete, so there are plenty of old warehouses and the like outside of the new development.




                        The sign on the hood over the grill reads, "All of our burgers are juicy and well done". Hmmph. We'll see.



                        As you can see on the overhead menu, ALL they sell are burgers, fries and beverages.

                        I ordered a Little Cheeseburger with grilled onions and fries. I watched the hamburgers get grilled on a flat-top, and the cook smashes them down with some sort of steel press with a handle. Everything is cooked to order, which is certainly better than at Wendy McKing's. I was surprised to see that they double-fry the potatos.

                        When my order was ready, the prep person wrapped the cheeseburger in foil, and then put it into a bag. Then a foam cup full of fries was placed in the bag, followed by a big loose scoop of fries.

                        I spread things out, and since there were no knives obvious, I took a couple of chomps from the cheeseburger to that I could photograph the inside:



                        The presentation was totally annoying. The fries fill the bag, over the hamburger. I spread a knapkin on the table and spilled some fries out onto it so I could get at the cheeseburger, and some ended up on the table. I could put up with this at a picnic in the park or something, but it is totally unnecessary here. Maybe I was supposed to tear open the bag, and eat off of that?

                        The cheeseburger was good, and I would eat one again. It was juicy, although I might have been thrown off by the grilled onions. I'd get a large, and forget about the fries. The fries were pretty greasy. Note the stains on the bag, in which they only rested for about a minute. They had a good, fresh potato flavor, but tended to be a bit limp. Based upon what I learned later, I think the second fry was done at too low a temperature.

                        The manager came over to chat, and confirmed that they cut their own fries on site, and then give them a cold water soak, par-fry them, and then finish them to order. He also stated that he was required by the health department to cook the hamburgers well-done. I pointed out that a restaurant can sell raw steak tartare if desired, and he equivocated, stating that they were worried about cross-contamination. I imagine that the truth is that Corporate is covering their tails.

                        Summary: The wait is about the same as at diner or coffee shop, without the service. It seemed long when just standing around. Of course, one doesn't have to tip. I had to pay for parking at this location. If one were already shopping nearby, it might be worth a try. Just stay away from the fries here. Maybe they are better at other locations. Certainly the general steps done in the cooking process are correct.

                          Was at the relatively new Levittown, NY location after being close by for once. The fries are excellent and the burger was good, but nothing special. If there was one out in Suffolk (like Patchogue or Centereach or something), I'd go there. Now I gotta try American Roadside Burger in Smithtown...it looks like Five Guys with minus the peanuts and plus a larger menu and a much nicer interior.

                            5 Guys isn't an In-N-Out Burger, but it is about as close as you can get to In-N-Out on the East Coast.

                                A 5 Guys opened about 2 miles away from me, here in Olathe, Kansas, two weeks ago. I understand it is their western most location in the United States.

                                Only been by once so far, but the product is much like I have enjoyed in Naples, Florida.

                                Wish they did malts as well!

                                      Thats why it is so important for the owner to TRAIN them correctly. You can have all of them cooking it right if they are taught that way the first time. Cooking burgers and fries is not rocket science, but, there is a right way to do it. You do not have to squeeze all the juice out of it to make it mid well or well down.                                         I went to a 5 guys today in Westminster, Maryland. It was fair. I got the classic burger with grilled onions, fries and a tea. It cost ten bucks. The burger managed to be both greasy and dry. They outside of the buger and bun were greasy, but the meat itself was dry. The fries were decent, but as someone else said, everything is dumped in the bag together, so it is a bit of a mess.

                                        All told, it is better than McDonalds, but I'd still rather go to the American Legion where the same meal would be made to order at half the price.

                                          Yesterday I went to the new Five Guys franchise in Murfreesboro, Tn. I was impressed with the fries, but not so much with the burger. In this part of the country, you can get better for less money.

                                            We now have Five Guys in Indianapolis. I have had their burgers & fries twice. I was not impressed. The fries are OK, but I have found that about 1/2 of the fries is made of of "bits & pieces of potato" not whole fries. I do not like the hamburger. If I want a good,quick burger in Indy, I go to Steak & Shake( double steakburger with mustard,pickle & onion)or 96th St Steakburger(great burgers and better fresh cut fries).

                                            Best fries from a national chain- Penn Station. Also, I love the philly cheesesteak sandwiches

                                              The last couple posts totally reflected my thoughts about Five Guys.
                                              I went just out of curiosity a few months ago, and hated it.

                                              There is so much more out there, without having to eat a squished well done burger devoid of taste. It seems that all the posters have mentioned the burgers being squished with the spatula. Obviously that is the way they train them. No matter where they are at.

                                              I would never eat at one again. West Coast?.. You are not missing anything by not having them in your neighborhood.

                                                  The grill man at the one in Midtown Miami had a dedicated squisher, sort of like an oversized bacon press. He gave the burgers a good smack with it to flatten them at some point during the cooking process.

                                                    Five Guys has just opened in Dallas and appears to be doing "land-office" business in some very pricey digs - ajacent to the indoor ice rink in the Galleria-Dallas.

                                                    Mrs. Metro and I enjoyed the food and memories of our days in McLean, VA where we enjoyed their burgers at their original locations. If anything, their fries are even better than before,
