I'm getting there. My Vienna rep is taking care of me.




Met with the Chamber of Commerce folks today. Had a great time. They were very helpful. There is an event in town Friday night that they are setting me up for. Somebody already sells dogs,actually 2 vendors - one is selling a "wiener sandwich" so dogs are out for this one. I am going to give meatball subs a whirl. Of course I'll be without my Vienna marketing powerhouse behind me on this occasion, but I know when I sell their product in the future, my cart will look good.

If anyone has tips for meatball subs please send them my way. Baptism by fire is approaching>

    Meatball subs: It is all (ok, half) about the bread.

    Hopefully, someone with NE and SW roots can aim you in the right direction.

    You need soft bread with a chewy, but not "crusty" auburn crust.

      I'd go with pre-cooked, frozen, small meatballs. I get mine at Smart & Final,( A mini-Sams/Costco) I think they're a Swift product. Use a prepared sauce and doctor it up a little. I use Ground Parmasean cheese and some Italian Seasoning. People think they're Home-Made! Restaurant Depot would be another source. A good Bun is essential. I agree with wheregregeats wholeheartily. Should be a no-brainer. You can offer extra toppings to build your ticket.

        Thanks. I'm not sure I even know what a good meatball sandwich tastes like, we only have a Subway around here and that's probably what everyone in these parts compares against.

        I'm hitting Restaurant Depot tomorrow. I would think they have everything I need. I know Sams Club has some meatballs so I would just need to find the sauce if RD can't hook me up.

        For the bread, is there a certain name or style ascociated with that type of bun? Thanks for the help.

          Where the hell is DHanis, TX???
          Do they have to pump sunshine into there??
          Are they're any bakeries in the area?
          Go to a supermarket or RD or Sams/Costco and buy some different kinds of buns and experiment on your friends and family. I buy "Aunt Haddies" Buns at Sams and they work good for this purpose. Ask the RD guys what their other customers buy for Meatball sandwiches! Usually the RD guys are pretty helpful.

            D'Hanis Texas is a little slice of heaven 60 miles west of San Antonio. Pop 500, 1A schoool with about 300 kids from K-12. Farm and ranch community. http://www.geocities.com/dhanis_tx/

            We are having meatball subs for supper tomorrow off the cart. That ought to iron all the wrinkles out.

            I'll trade you 360 days of sunshine for 10" of rain. It wouldn't break our hearts if that storm brewin' in the Gulf decides to make it's way up here and hang around for a few days. Hopefully it will come across the King Ranch area where nobody lives. We are way behind in rain this year as you can probably tell from the pics.

              Wow, you really scored on that vienna stuff!

              On the meatball subs I used larger meatballs on mine as I find they are softer and easier to chew that the little ones besides giving the impression of so much more for they money. REMEMBER presentation is very important in foodservice.

              A GOOD SOFT roll is key and a little kick in the sauce (garlic powder and some italian seasoning - keep track of how much so you can duplicate the recipe each time)will make you popular.

              You mentioned there were hot dogs at your upcoming event, what about some sort of sausage? Or even sauages in your same sauce? The more you can offer the more people you can please.

              Antways best of luck in the insane (but wonderful) world of food.

                Since you're out there in Mex-America, you might want to consider using Bolillo Rolls. The Pre-cooked Meatballs I've used are nice and soft providing you don't overheat them and they are easier to fit in the bun. Youy might want to add sauted onions and peppers to increase your average sale.

                    I bought 1oz and 2oz meatballs plus Marinara from Rest. Depot. I found some very nice fresh sub buns from Wal Mart. I fired up the cart and tossed in enough for Subs for me, the wife, and my F-I-L.


                    I put them on the left side of my cart just to see how long it will take to bring to temp- this side the pots sit above the water. It took an hour and 10 minutes to get to 165 deg. I will not use this side to heat, only to maintain. The right side directly over the flame will be my primary heater and it rocks so I'll transfer stock over to the left side(holding) once it's up to temp.

                    The product tasted great. My F-I-L suggested I use less sauce on the sub to ease the messy factor. I did kind of pile it on! Pileing it on is a normal Son IN Law duty right?

                    The bun is a 9" bun. We are going to trim it to 6" and sell for $3.50. We will take the other 3" and sell it as a kids version for $2.00. Small kids won't be able to eat a whole one anyway and 9" is way to big. (Yes I ate a 9"er and I'm about to pop)

                    Cokes/Water for a buck, chips for a buck. Adult combo for $5.00.

                    Now , if only that hurricane would hurry up and get us wet before Friday night.

                    Thanks for everyone's advice. This will be my first official event with my new to me cart. I'll try to remember to take my camera.

                      Foodbme- I bought some Bollilo rolls amd they were good but just a tad too small for what I wanted. I was suprised at our Wal Mart bakery. They had good stuff and the lady behind the counter said she would bake me a fresh batch on Friday. I just need to give her a days notice and the count.
