Fixing a Bratwurst

If I want to serve bratwurst out of my concession trailer and don't want to set up my grill, what is the best way to prepare a precooked bratwurst? Do you recommend boiling, a hot dog roller grill, or a hot dog steamer. There are some smaller shows that I just want to sell out of the trailer and not set up the tent with the grill in it. That means for the hot dogs and brats I can only boil, use a roller or a steamer because I don't have an inside grill. Thanks. Mike S.

I prefer my Hot dogs boiled, but my Brats need to be charred!

DO NOT BOIL!!!!!! Simmer Do you have a flat top in your trailer?? If so simmer the brats then finish them on the flat top to get the color. I have cooked literally tons of brats for a local festival, we do it opposite of Russ though, we simmer the brats in the beer, then when plumped, we grill them forthe color, then back into a beer bath to hold for serving. Serve with bun, spicy brown mustard, saurkraut.

Also, how long can you hold them in the beer bath and still have them taste good when served. Thanks again. Mike S.

190 - 200 you may have to adjust up or down depending conditions. You can hold them in the beer bath until service, we usually were selling them quickly enough that nothing was there too long. If we noticed one that was not up to standards that became the cooks to eat. Personally I have eaten brats that were simmered 2 hours, and they were plump and yummy
