Flounder for dinner

I went floundering on the beach in the Biloxi Bay last weekend and me and my friend jigged a limit of flounder so I have been cooking them for the entire week.  You can't beat the taste of a fresh caught flounder.  

 
Fried flounder with hushpuppies, sweet potato fries and Asian slaw.   

 
Whole flounder stuffed with crabmeat, mushrooms, and breadcrumbs.
 
Let me know if anyone else has any good recipies I have plenty of fish left.

    You probably didn't attach your pictures correctly. I've been here for years and I still can't figure out how to attach pictures.

    Now, about that flounder. I grew up eating flounder in NYC. My mother made it at least once a week. She used to pan fry it coated in matzoh meal. I loved it cold leftover the next day, as well. And, I often ate it out in restaurants. No limits back then in the golden olden days.

    Living in Dallas, I rarely if ever, see it now. And, I do miss it. It's always been one of my most favorite fish to eat. However, further south to the Gulf in the Houston area it's quite prevalent.

    Yeah down here on the Mississippi coast this time of year they are everywhere.  We get them by wading in about ankle deep water with a propane light and jigging them (long pole with pointed end, almost like a spear).  We got 30 last weekend which the local limit but I will be going back this weekend as now the whole family wants fish.
     
    As for the pictures, I am pretty sure I got it right but I noticed there is a note that says I have to have 30 posts before I can post links.  I guess a few more and I will try again.

    You mean gigging them. Jigging is a technique used in hook and line fishing. I am amazed that Mississippi allows the use of gigs for sport fish.

    Gigging is actually probably the correct spelling now that you mention it.  I guess a jig would be what we were dancing after we hauled in our catch.  Yes you can recreationally gig 15 flounder per person per day.  Not too many people do it anymore but it is fun.  I can assure you there is no shortage of flounder as we could have very easily brought in 100 that night.

    Mmmm. Frog Legs, Bream, Mullet, some home fried taters, pups, slaw, and beer.  And Swamp Gravy.  Maybe some fresh 'maters also and corn on the cob.  Where is my link to the Swamp Gravy, AL?  Mike:  U are cool.  Rock ON.

    When I lived in Pensacola, had a friend who had a "Gig Rig".  We'd go Giggin' in the Sound betwween P'cola Beach & the Mainland.
    He built a float box with a 12volt headlight in it wired to a 12V battery in his flat bottom boat. Float the box and boat, gig the flounder, drink the beer, life was good!

    bb-you brought back a lot of old memories, we had a summer house in Clermont Harbor MS. where every summer my uncle would take us kids "floundering."  We'd set out with a Coleman lantern, burlap sack, and a gigging pole, and in all those years we never caught one flounder, but had a lot of fun.  I did have a girlfriend who scooped up a soft-shelled crab and put in her pocket, which endeared herself to my uncle who talked about it for years.

    Lightly dust the fillets with seasoned flour, pan fry in butter, when done remove, add the marinade to the pan and heat quickly, which will give you a nice, meuniere type of sauce.

    Sorry about the above - 

    Chef Andrea Apuzzo's at Andrea's Restaurant in Metairie, LA. uses this to briefly(a minute on each side) marinate his fish fillets before putting them into the pan.  This can be used with just about any type of fish.

    Chef Andrea's Fish Marinade  

    1/4 cup white wine
    1/4 cup extra-virgin olive oil
    1 tsp. Worcestershire
    1 tsp. soy sauce
    1 TBS. lemon juice
    1/4 tsp. Tabasco

    Mix all the above ingredients in a shallow bowl (it will not blend completely, but that's ok).  Set fillets in the marinade for a minute, turn, and marinate the other side.  Allow the marinade to drip off before seasoning fish .

    Cook the fish in a pan (remove fish after cooking) add marinade and reduce town into a sauce.

    A favorite way to prepare flounder here in Savannah is Crispy Scored Flounder with Apricot Shallot Sauce
    Take a whole headed and gutted flounder and trim the fins. Score the fish on both sides with diagonals to make a diamond pattern.
    Dredge in flour/cornmeal/salt/pepper mixture.
    Shallow fry on both sides til crispy and done through.
    Place on platter and drizzle with sauce made by lightly sauteing diced shallots in butter and then adding Chinese duck sauce. Simmer the sauce while the flounder is frying.
    The meat pulls away in diamond-shaped chunks.

    I look forward to finding some Flounder on our next roadtrip..If anything is alive on the Gulf Coast this Fall.

    HoJo's used flounder filets for their Fish Fry Special back in the days when I worked at one on the north Shore of Mass. What a great meal deal...99cents for all the Flounder, fries, and slaw you can eat. The fish was frozen, but battered and fried in our kitchen. I really like stuffed Flounder!!
