I bought some arrowtooth flounder filets at my local seafood shop the other day. They were still mostly frozen so when I got them home I stuck them in the freezer for 2 days. I took them out and let them defrost for 2 hours then dipped them in egg and then ran them through a corn meal dip. I baked them at 350 for 15 minutes. When I pulled them out the fish was mushy. Nasty mushy. Any ideas whet went wrong? MikeS.

You got some bad Fish.Fresh local Flounder when fileted and frozen is as fresh as the day it was caught.I suggest you buy some fresh fish the next time.Do you have a seafood market around?Also when you do the oven fry thing ,Crank the oven up to 450 or 425 and you should get better result with the breading.

Have to agree strenuoously with Jelly. Fresh fresh fresh and higher heat. Personally I'd never bake flounder unless it's stuffed, pan fried or steamed in a foil pack on the grill are my favorites
