Knife Making is the USA

Joel Bukiewicz loves grinding steel. He's the man behind Cut Brooklyn, making high-end knives to order for chefs and home cooks. Bukiewicz found that honing metal was more satisfying than honing his novel, and  Bukiewicz remembers details about every knife he's made. The video takes you through the knife-making process and addresses common questions, like how many knives do you need, what's up with Santokus, and what is the best knife to own. http://www.clicker.com/web/obsessives-chow/Knifemaker-286813.html

Video How to Make Grilled Cheese with Laura Werlin

By Meredith Arthur, Eric Slatkin, and Blake Smith

Laura Werlin has pointed us in the right direction before when it comes to cheese. The noted cheese expert and author of [font=""calibri","sans-serif""]Laura Werlin’s Cheese Essentials now turns her critical gaze to the sine qua non of cheese expression, the grilled cheese sandwich. Only a few factors—the butter, the cheese, the bread—yet so many possibilities for a wrong turn.

Video How to Make a Burger with Hubert Keller

Hubert Keller, chef-owner of San Francisco– and Las Vegas–based Fleur de Lys and a television mainstay (Secrets of a Chef, Top Chef, Top Chef Masters), is obsessed with hamburgers, as any self-respecting Frenchman should be. He generously shares some of his secrets (more can be found in his book, Burger Bar: Build Your Own Ultimate Burgers).

Thanks for sharing those. I love Who-Bear! That guy is such a talented chef. Did you see that burger he made?!? That was like a medium 10 ounce chopped sirloin burger with Portabello mushrooms, beef spareribs, pesto, tomato, lettuce, caramelized onions all on a toasted Dutch Crunch roll, incredible. I love his disgust with the frozen patties..."I don't even want to touch these let alone cook with them. They were probably grind two years ago."

Eating the road, I thought, just the opposite when I watched that video. In fact I had two thoughts:

1 I don't want a burger that is all that complex. It reminds me of meatloaf. But I have never had one of his burgers and I could be way wrong on my first impression.

      2. With today's cheaper and much better quality video cameras, we (people on this forum) should be shooting our own videos for the internet. It could make a hell of a good presentation for a web site and may get some national attention. I think by this time next year I'll have at least a couple under my belt.  When I bought my new computer system I special ordered a monster so I could edit videos. I have not done any yet but when it warms up I'll start.
