Food storage after the event? Tue, 01/4/11 8:57 PM (permalink)
I have a question concerning storage of food after the event is done and you are going to the next event only be 2 weeks away.  Where and how do you keep the extra food cold or frozen on the road.  Should I invest into cooler with ice or a large freezed on wheels and run a generator to keep items frozen?   I will be traveling in a motorhome pulling my trailer.   What is the best way to solve this problem without running out of food early.  I really do not intendto use much frozen product mostly fresh.  Any  assistance is greatly appreciated.

Thanks      JUST STARTING OUT and already have 2 locations to go to.

I have a 7 C.F. chest type freezer in my trailer running off a inverter connected to the pickup battery. Works great. Remember, food with stay frozen for hours. In fact, I`ve traveled 8 hours with frozen corn dogs in chest freezer without power and still frozen when I got to event. Just don`t keep opening freezer door to check if everything is alright.

We traveled from SW NC to NM and kept frozen product in the freezer in the RV. We held the food from the beginning of July until beginning of August when we could get permitted in NM (left NC on July 7 and pulled into Socorro on July 18). We did run the generator to keep the fridge and freezer going but we also were running 8 hour days in temps of 100F and up. We often travel in the RV without running the generator. Our under counter freezer (upright) and refrigerator both will stay cold for up to 8 hours. We try not to have to run more than 8 hours a day before pulling into a parking lot for the night. We use a electronic thermometer that measures indoor temps and has a sensor to stick outside. The outside sensor we place inside the freezer (I also have one for the fridge). That way we can monitor the temps without opening the door. I hold my freezer temps at 0F MAX... prefer lower and set the freezer to come out west down to -20F.

Thanks for the suggestions.  I"ll get a small freezer in combination with the rv freezer to keep things frozen.

        Thanks again

Just to make something clear. The freezer in our RV is not an "RV" freezer. We removed the old Dometic unit from the RV and replaced with a 110VAC Under counter fridge unit and an undercounter freezer unit. Our freezer is 4.4 CF. I bought the freezer from Compact Appliance.com I need a bigger freezer than fridge... not the other way around. We run a dedicated 4 cf refrigerator for the food cart.

My opinion of the RV units isn't too high especially since the RV units often won't cool in very high summer temps (when you really need them) and because they tend to catch fire.

How far are  you traveling and how long is the event? We have events that is very close to our commissary, and we freeze all our hot dogs the day before, pull it out and put it in the cooler that morning. We didn't need ice in the cooler since the whole thing is frozen solid. During the event, we use a turkey fryer to boil water really fast, and boil the hot dogs as we go. We use the grill to keep it around 160 degree and it works well for us. For the 5:1 Nathan's 50 dogs takes about 10-15 mins to get it to temp (180 degree is what we shot for). So as  soon as you see the dogs on the grill is running low, then we boil the dogs to keep up, everything was good. At the end of the day, the uncooked hot dogs are still frozen solid and we just take it back. HD saw our cold storage is frozen, and our hot holding was a least 160, they were very happy about it. The BBQ guy kept his meat at 109, he got shut down, sad but necessary. Those events we go thru about 600 dogs per day. Hope this helps.
