Fried Mac& Cheese

I had fried Mac And Cheese triangles at a bar a few weeks ago, has anyone had this? It was really good. Dipped in Ranch dressing... I nearly ate the entire order by myself.

    Tried it at a local rib place and thought it was a little on the nasty side myself.

    Had this dish at Uncle Bubba's BBQ in the western suburbs of Chicago. It was served in a ball! Brown, crunchy crust on the outside, surprisingly moist, rich mac and cheese on the inside. Pretty good. More interesting for its novelty than its culinary value. Still, pretty good.

    Food Network(Alton Brown) has a recipe that doesn't sound too bad. He calls it Next Day Mac and Cheese "Toast"

    I don't know, some things seem good enough by themselves that they shouldn't be messed with by being submersed in fat and fried. This is one version of mac and cheese I can do without. Same goes for fried Twinkies.

    I find as I get older, I am more careful with saturated fats in my diet in hopes that I will be here longer to keep enjoying life and good food. If I am going to consume fat, it will be via the occasional tasty prime rib or steak, or fried oysters instead of wasting my fat consumption on frying something that didn't need it.

    hmmm, Fried Mac-N-Cheese....
    I'm thinking of other casserole dishes I wouldn't want fried:

    fried lasagna.
    fried beef stroganoff.
    fried chicken pot pie.
    fried cavatini.
    fried goulash.
    fried tuna noodle casserole.
    fried turkey tetrazini.
    fried baked ziti.

    yup. Wouldn't fry any of those either.

    I gotta admit.....I like Fried Mac and cheese. Now,the version I like is not deep fried. This is basically the recipe:

    Leftover mac and cheese, refrigerated overnight
    1 egg
    couple dashes of cayenne pepper
    2 teaspoons of mustard of choice(stoneground for me)
    1 cup plain bread crumbs OR matzoh meal
    1 stick margarine or butter OR good coating of butter flavored pam

    mix egg cayenne and mustard together........add to mac and cheese, blending in well. Take a glop of the mac and cheese mixture and pat in a 1/2 inch thick patty. Dredge through breadcrumbs or meal and put into melted butter or margarine or hot pam'ed pan and brown on both sides. Remove from pan and serve as is or with some Franks hot sauce.........mmmmmmmm

    What web site can you suggest wherein they offer raw milk, biodynamic cheese, all-natural pastured chickens, turkeys, eggs, steak and Dutch cheese, jerky beef sticks that are farmstead-made from grass-fed cows, meat and grass fed poultry? I need your help.. please?.. :)

    Hmmmmmmm. I may or may not try this. Probably not. Cayenne pepper did catch my attention, though...

    I know, it sounds awful...but it's fabulous!!! The secret is, when trying to imagine it, you can't think about gooey macaroni and cheese. That would be awful. This needs to be a very tight casserole that is baked, then chilled and sliced into small wedges. Dredge the wedges in...now pay attention...this is important...corn meal and a little cayenne. Flash fry the wedges and drain well. The result is amazing. Forget about ranch dressing. I am a purest, no dipping. But if you must, red gravy (pasta sauce) is a good choice. Yum.

    ok so this is a little off topic and this resturant is very unroadfoodie, but if your in nyc and you want some really good mac and cheese (not the fried kind) try Balthazar down in soho. i know not what ya think of first when you hear the name but it is really really good. i think they only have it at lunch time.

    We used to go to Restaurant Leslie, a tiny place owned and cheffed by the late, lamented Leslie Revsin. One of my favorite appetisers (after the scallop quenelles and the roquefort beignet with pear puree) was the pasta fritter. She made what was, essentially, a mac n cheese, although there was a good bit of bechamel and some other items (I'm going back about 25 years, so the details are kind of foggy).

    She'd make the stuff, put it in a pan - unbaked - and refrigerate it. Once it was set, she'd cut it into small portions, anglaise it, and deep-fry it to order. I believe she served a little tomato coulis with it, but the real treat was how the bechamel (or veloute, or whatever) came running out when the fritter was cut open. Lovely stuff, lovely restaurant.

    Actually, this sounds pretty good to me. Of course, shirt cardboards sauteed in schmaltz with onions sounds pretty good to me, too.

    I don't wish to speak for roossy, but based on her happy face emoticon (imagine me shuddering like Sideshow Bob when he gets hit in the face with a rake), I think she was offering a genuine suggestion. As for her being "bothered" by your post, again, I don't think that is the case.     Some years back (in my 'chain'days) TGIFridays had a"Brocolli Cheese Flash" listed on the Appetizer menu. It was a small Brocolli 'flower' imbedded in cheese and then breaded with a Panko-like light breading and deep-fried. They were 3 or 4 to an order and each was roughly Golf-Ball sized. (not single-bite items) The frying did a good job of browning the exterior and turning the cheese into a 'melt' while the brocolli seemed 'al dente'. It was really pretty good. One order was a bit much for one person if followed with an entree, but shared it made a good starter course. It dropped off the menu about 11 or so years ago.... But then I stopped hanging out at the bar (for the free happy hour food!!) in Fridays about the same time. Strange, my 11th aniversary is coming up in a couple of weeks
