Fruit Empanandas

Just had a delicious Pumpkin Empanada at Tesuque Village Market in NM, freshly baked and warm. They also had apple. I imagine you can make these in many flavors, but I wonder what you have actually seen (and tasted) of these cute little pies/turnovers...

The bakery I go to in Houston has pumpkin and sweet potatoe which are the traditional flavors. They also have pineapple, apple, cherry and fig. All are good. There used to be a place on Westhiemer called Marina's Empanadas that sold savory empanadas but I don't know if they are still there. I will have to do some exploring there and I hear of one in Katy, Tx. joe

I make a nice pineapple/cranberry empanada, with fresh pineapple browned in butter, sugar and fresh cranberries added.

I guess it depends on where you live and where the Latin American immigrants come from in the area. We don't have many Mexicans in NYC, although it is growing. Mostly Peurto Rican, Dominican and South American.
