Ok gang I’m going to help a friend with a fund raiser for Jr League football.
We are going to do a breakfast for 500 people and the menu is pancakes and sausage. I do BBQ and I don’t know anything about pancakes and sausage. I’m thinking 3 cakes and a couple of sausage links or patties per order. Is that about right? I’ll be using one of those automatic pancake things, and the local high schools flattop,
but I need suggestions or feedback on how much batter I’ll need, a good sausage link or patty, and any other information that may be pertinent. Is there a good precooked sausage on the market? I’m not a big fan of precooked anything but one of my friends involved in this effort thinks that will save a lot of time and effort. Thoughts on the number of help (all unprofessional) would be appreciated also. Anything you can think of shoot it to me thanks in advance

    We use a sausage patty from a local butcher shop that we buy in a 10 pound box.(Usually 40 in a box) We usually make up a bunch of it ahead of time. I've never done pancakes, but we've done lots of eggs.
    We've used precooked sausage patties and I'm not a big fan.
    We've done breakfast at a number of shows and we usually have one person cooking the sausage and another cooking the eggs and usually someone taking orders. But it sounds like you may have to cook everything ahead. Do you know how big the pancakes will be?

      No I guess about 3 inch with a stack or serving being 3 of them. We will use one of the batter drop units, so we will have uniformity in the size.

            DR Jeff. I would guess that you have access to a food broker with your license/tax ID. Syco had boxed uncooked sausage patties on hotel layouts. Just lift the paper out and line 'em up on sheet pans and bake. The hotel layout boxes are 10lbs. Figure 500 x2 1 oz patties(1000oz ? 16oz-62.5 add 10-12%- 70lb or 7 boxes. The paper makes setup and clean-up a breeze. You can also get frozen batter in 5 gallon buckets. guestamate the ounces and add 10% for spillage/overpour.
            I did a church banquet for 500 with brunch(eggs, sausage bacon,homefries,sliced turkey and salads). It was a ton of work but a huge succcess.
            Beware-its more likely to have more people show than less!

                If you have a IHOP or Perkins in your town, you might ask them for a donation of their pancake mix.
                Also if you have a bob evans, they may donate some of your link sausage.

                My lions club holds8 pnacake breakfasts a year, we get donations form all sorts of places like that

                    Both are excellent thoughts. While I was reading your post I thought about all the radio promotions I used to do (another life) and we need too also get bounce back coupons from anyone that donates commisonary items so they can see that if they support us we will also support them. great idea.

                      One thing you may want to look at. Our food supplier sold Pancakes already cooked. They were frozen. They were heat and serve. They tasted very good.

                      When we had the grocery store. We used the pre cooked pancakes and french toast as it ws very easy AND FOLKS said they liked them. They even had flavored ones like strawberry and blue Berry.

                      Our Local Lions Club gets McDonalds to donate sausage for their all you can eat Breakfast fund raisers. It tastes good and most folks like it. They also use the pre cooked cakes.

                        DR of BBQ. I was thinking of every Pancake fund raiser I have been too. Most have been all you can eat.

                        Maybe they could offer it both ways? Like 4 bucks for a plate of 3 cakes and sausages. Or pay 7 bucks for all they could eat?

                        I mean really, how many pancakes could a person really eat? I know its off topic, but thought it may give ya somthing to think about Sorry.

                        Also, on the pre made Pancakes. I think Sam's Club sells them in My area. Not all stores sell the same things. Most any food service distributor would help you out as well. It has been my experiance. They carry these cakes Just for this reason.

                        There are heat and serve sausage links and patties available from food service vendors. Fresh, may sound like a great way to go. I would just be worried about making sure they are done.

                        I asked my wife how they cook them (she has done the pancake fund raiser at our church and at the Lions club many times). She told me the secret to the sausage. Use a fryer. She says you can cook 1000 patties, links or bacon in no time with a fryer then just use a warmer to keep them warm for serving. Maybe the school will have a fryer?


                        I also noticed you location Is Springfield Illinois. I know the vendors in that area very well as we had a grocery store only about 100 miles away.

                        I did check the list we have from Sysco. They have a pancake batter mix (its poweder and you at 10 cups of water). It yeilds 68 4.5 inch pancakes. It is a 5 pound box.

                        I do not see why you could not pre cook the cakes like a bit before you start and use a heating tray or crock pots to keep them warm. Just an idea.

                        I guess you would need some folks to clean the tables. two cake cooks and 1 sausage cook?

                        What about beverages? I know around here. Mcdonalds will donate these large coffee totes. They hold like 10 gallons of coffee. You just have to return them once done.

                          just from experience, in warmer or crock pot the pancakes will stick together if made and then reheated.
