I found a "gallina" in the local latin supermarket, looked gorgeous.  Had a recipe for a soup made with gallina. Its my understanding a "gallina" is an older hen, so the meat is tougher but more flavorful.  I made a basic chicken soup, added some oregano, cumin, cilantro soup greens, potatoes, noodles.  It took about 4 hours till the bird was nice and tender but it was very delicious. 
Does anyone have any recipes for "gallina?"  Thanks.
