This weekend is the National Restaurant Association Food Service Show in Chicago at McCormick Place, May 22-25. If you happen to attend, please stop by the Vienna Beef booth for some hot dogs, chili, corned beef, soup, and a little schmoozing with me at Hot Dog University table. Mark Reitman

Oh yeah, I meant to ask after viewing that link a few days ago and I forgot... What is that you are putting on the Polish dog? Looks like sauteed onions, but I can't really tell for sure what is all in there. I suspect editing of the show cut out your description. Did you call it "Maxwell Street Polish"? I don't know Chicago at all, what is it, why is it called that? I did find a wikipedia article, but I don't always trust those. I do, however, love a good Chicago Dog, except I hate when the tomatoes are very unripe and big ol' flavorless wedges are shoved in them. I usually pick off the tomato if they don't look ripe. Great job CSD, you are very articulate and smooth on camera!
