I am not a chef nor even a very good cook. I have made this particular potato sald and my family liked it. I like it with bacon in it. Look it over and if it please you, try it. Prep. Time: 0:30 1 lb. bacon - fried, crumbled, grease reserved 9 med. potatoes - peeled, sliced, boiled until tender 1 lrg. onion - sliced thin 1/2 cup all-purpose flour 2 1/4 cups water 1 1/4 cups distilled white vinegar 1/2 cup granulated sugar Related Cookbooks: -Toss together crumbled bacon, potatoes, and onion in a bowl; set aside. -Melt bacon grease in saucepan over medium-high heat; stir in flour; slowly whisk in water and vinegar; stir in sugar; continue cooking, stirring constantly, until thickened. -Pour hot mixture over potatoes in the bowl. -Serve hot. 8 medium russet or red potaotes (depending on personal preference) 4 oz. bacon 1 medium onion finely diced 1/2 cup cider vinegar 1-1/2 Tbsp. sugar ground black pepper to taste Peel potatoes and cook in salted water until tender. Drain and then dice in 1/2" cubes or 1/4" slices (again this is just personal preference). Fry the bacon and remove and drain. Saute onion in the bacon grease until golden. Combine the vinegar, sugar, and pepper and add to the onion and bring to a boil. Add the potatoes and bacon and gently stir. Cover and cook until the potatoes are hot. Serve at once. Leftovers are good eaten cold the next day if you have any.

Thanks so much, that looks really close. I am going to add hard boiled eggs because my mom always did. I really appreciate it!

Put in some thin (or thick,I like thin) sliced celery. Perks it up and adds a nice crunch to it. Sundancer 7's recipe could been lifted out of mama's cookbook if it had celery(oh, and the hard boiled egg slices). Sometimes I'll add a wee bit of brown horsey mustard or just a dash root by itself. I guess I get a horse hair every now and then !
