 HOW TO COOK TIP OF THE WEEK: Getting the Most Juice Out of Lemons
Is there a way to get the most juice out of a lemon? We squeezed a dozen lemons—cold lemons, lemons rolled on a hard surface, room-temperature lemons, and warm lemons—and found that each yielded the same amount of juice, although warm and room-temperature lemons were softer and therefore easier to squeeze than cold lemons. To quickly warm a cold lemon, you can heat it in the microwave until it is warm to the touch.

      I find that Gallagher's Sledge-O-Matic works the best on all fruits especially Watermelon!

        Well a tip from my grandmother who made the best fresh lemonade in town is to wash your lemons, dry them, then rasp them in the sugar your are using to make your lemonade.

        You will get the oils from the lemon incorporated into the sugar, and that makes for a better tasting lemonade.

        Then, you cut in half and squeeze the juice out using a juicer (mine is electric)

          Well about the only time I use lemons is if I make a lemon martini..... and I just juice them as I would for anything else. Fresh lemons are so much better than juice concentrate but I do cheat from time to time.

          I do like to use the rind for cakes and pies.

              I freeze my lemons for juice first and then soak in cold water to thaw as this will expand the cells holding the juice thereby breaking the cell membrane. This process "pre-squeezes the lemon." so to speak. I find that I get the best yield with the least work.

                  I have my staff peel and pit the lemons then put them in my Vita Mixer, the pits and peel make lemonade too bitter, IMHO.

                    Do you do this for events? How many do you do, how long does that take?

                    I think Vita Mixers are to cool. Great Tool.
