Getting the fish smell out of cooking oil Wed, 07/2/08 3:49 PM (permalink)
I bought a deep fryer and tried it out with the family cooking fish. My first semi-professional gig is Friday cooking spiral sliced potato chips. (I'm in the local Lions club so it's also a fundraiser for them).

Can I use that oil again? Is it possible to get the fish smell out?

Let me add that everyone here has been extremely helpful to me over the last year or so as I got ready to do this. Thanks again.

    the fish smell is there for good in pro shops we use 2 fryers one for fish one for fries usally the fresh oil one for fries the old oil for
    fish also watch out for salt as i have eaten in fish houses with salty food from the fish breading leaching salt into the oil

      Fish has an oil in it. Once you have put a piece of fish in your oil, the fish oil is now part of the oil. Now the problem is seperating the fish oil from the cooking oil. Every time heat is applied the fish oil heats up and smells. RJF

        that oil is now trash. Even fish fried in it will be off tasting.

          Unfortunately your oil is history because you cannot get the fish taste out of it. Dump it and start over again.

            My dad used to have a fish fry for our church. He always stated that you fry the fish first, then a batch of frys, next fish, next frys etc.

            He said the frys cleaned the oil up.

              your dad probably used fresh oil ever time you can do it for one day it seems when its a day old the fishyness comes out
