Goat Cheese Recipes?

I recently discovered I like goat cheese, I've mainly been eating it with bruschetta, however I'd like to be a little more adventurous rather than just eating it with bread all the time. So does anyone have any good recipes for me to try out?

Sprinkle it on a green salad. Next time you make corn cakes or muffins add a little crumbled goat cheese to the mix. We used it for one of the cheeses in a Tomato Pie (not a pizza) we recently made ( the cheese under the tomatoes). BTW: We bought some from a woman on a small farm in Provence and she offered three choices: Today's, moist and soft; Yesterdays, a bit dryer; and 3 day old, quite dry and crumbly. We didn't notice much, if any, difference in flavor- maybe a bit sharper as it aged. I don't think such choices are commonly available here in the USA. Cheers, John

Very thin pizza crust, bake it first. toppings: figs, goat cheese, honey put back in the oven until cheese gets a little melty.

Portobello burgers. Grill gilled whole portobello caps -- gill side down first -- and the top them with goat cheese after turning. Oh, be sure to brush both sides of the portobello with oil first.

Put 8 oz of goat cheese in a nice oven proof dish and bake it, I think around 400 for about 15 minutes, 'til it is lightly browned. Top it with sundried tomatoes finely chopped with garlic, and basil, salt and pepper, and let your guests slather it on crackers...I have a more precise recipe somewhere if you are interested.

Slice a nice 2" round, dip it in an egg wash, roll it carefully in a bread crumb mixture, put it on a plate and back into the refrigerator for 1/2 hour. Crank up the oven to 350F, let it get hot for about 5 minutes. Take out goat cheese, put on oven proof plate, bake 15 minutes. Place goat cheese on plated salad, fresh baby greens best with walnuts and dried cranberries and a light vinegrette made with red wine vinegar. I love it.
