Gourmet pitta breads as a fast food option? Thoughts

As part of my dissertation, we are investigating if there is a market for a gourmet pitta bread service. The basis of our idea is to offer high quality ingredients at great prices while also providing a speedy meal on the go. 
I would love to know what you guys think and some yummy recipies to add.
We would greatly appreciate if you could take a couple of minutes to fill in this questionnaire in order to develop the idea further.

I'm not trying to be fresh...but if you have made it far enough to the point of dissertation...and have a specific project in mind revolving around a product or menu item...you must know learn and never ever forget...it's Pita not Pitta.
