Great Bar-BQ in Southeast Texas

If you ever find yourself traveling along Highway 35 in Southeast Texas, about halfway between Houston and Corpus Christi, look for a little town called Point Comfort. Here you will find perhaps the best barbeque joint in Texas. Merle's Bar-BQ is located right on Highway 35, across from the Alcoa plant. If you enjoy tender brisket, mouth-watering ribs, sausage, and great sides, then you should take a little time to stop by Merle's Bar-BQ to find out what I am talking about. The plates that Merle serves are also huge. You can catch Merle from Wednesday through Saturday, and even some Sundays. They also cater for weddings, dances, and just about any other event that needs world class barbeque. When I spoke to her about her catering business, she said that it is relatively new, and she would very much appreciate some input from fellow caterers regarding how they got started, advertise etc... Do any of you cater, and if you do, do you have a few tips that I can give Merle to help get her started. She has the cooking part down, but she is having trouble finding customers and events.
