Hamhock, Kale & Lima Beans

My husband has a problem eating beans. Or should I say my kids and I have a problem when he eats beans.
I recently bought canned seasoned baby lima beans to serve with dinner and he had minimal problems after eating them. So I decided to buy dried baby lima beans to prepare so we could see if he could eat them without too much trouble.
 
I bought a beautiful hamhock about as big as my head
 
 
 

 
After soaking the beans overnight, I drained and rinsed them. I tossed them with chopped onion, garlic, green pepper, parsley, black pepper and a splash of siracha sauce.
 

 
I put them in the bottom of my crock pot and added about a cup of pork stock. I put the hamhock on top and then covered the hamhock with cut up kale.
 

 
I cooked it for 7 hours on low. It was so delicious!
 

 
And the good news is, it's 24 hours later and no one's mentioned maybe Dad sleep at a hotel tonight!
Anyone know why he is able to digest limas and not other kinds of beans?

    Wow!  What part of the South is New Jersey?

    I don't know your answer but your dish is amazing!

    Tell me about pork stock.  Did you make it?

    They are two different species of beans.  Limas are Phaseolus lunatus, while common beans (which include Anasazi, black, cranberry, pink, pinto, kidney, white and yellow beans) are Phaseolus vulgaris. 
     
    Gassyness is caused by hard to digest complex carbohydrates in common beans, which are said to be reduced by doing several soakings of the dried beans, discarding the water each time.

    6 Star is correct. Soak the beans overnight and then do multiple rinses. It makes the beans impotent and unable to reproduce in gaseous forms!
     
    Never heard of Pork stock?

    Thanks for the nice comments. Many of the southern style foods I  prepare and eat were introduced to me by my husband who is from Louisiana. I make a mean crawfish ettoufe and good fried chicken but I leave the gumbo to him. He really has a knack with gumbo.
     
    Thanks for the info 6star, maybe the difference in species makes the difference. As for the pork stock, this is what I used.
     

     
    I am able to get most of their flavors in the 8oz boxes.

    I've heard it was frome the breakdown of sugars (oligosaccharides) in the beans, and their levels must vary from each kind of bean. 

    Soaking them in baking soda supposedly helps, and what about some of the products like beano?

    Beano soesn't seem to work very well for my husband. Right now I am baking giant lima beans in my oven. I searched for a recipe that would not be so sweet as the baked beans I'm used to eating. I'll let everyone know how they turned out. I'm actually baking them in a casserole dish my Mom always made casseroles in. It's about 50 years old or more and has no markings on it. I ate alot of delicious ham and potato casseroles out of that thing!

    Agnesrob - the dried large limas are my favorite (what our family calls butter beans), and we always cooked them like other dried beans, with diced onion, celery, garlic, bay leaf, and pickle meat in a dutch oven on top of the stove.  Without going into details, they affected me more than any others, and I can barely eat them, but after reading the tips posted here, and seeing your pictures, I might try cooking them using the the multiple rinses technique.

    I love Kale and I love Lima Beans - never in a milllion years thought to try them together!   Definately going to have to now!

    Here is my Mom's coveted dish.
     

     
    Here are the baked lima beans.
     

     

     
    And here is the recipe I used.
     
    BAKED LIMA BEANS
     
    2 c. dried Limas
    4 slices bacon or salt pork
    1 med. onion
    1 green pepper or cubano pepper
    1 clove of garlic 
    1 c. canned tomatoes
    1 large fresh tomato, diced 
    2 tsp. salt
    1 tsp. Dijon mustard
    2 tbsp. brown sugar
    Soak beans overnight in cold water. Drain, add 2 quarts of fresh water and boil until tender. Pour beans in buttered casserole. Add minced pepper, onion, garlic. tomatoes and seasoning and mix. Put bacon or salt pork on top and bake, covered. Add water if necessary. Bake 2 hours at 325 degrees. Uncover for the last 20 minutes.
     
    They came out really great! Hopefully my husband can tolerate these also! FYI, when I boiled the beans I added a half an onion, whole carrot, stalk of celery, bay leaf and a bundle of thyme .

    Great looking dishes.
    Doesn't get any better than a big old pot of beans and corn bread. I don't think I have ever eaten Kale.
    I would enjoy the food even if it does mean joining the band. Just don't go to the concert that night.
