Hand-cut French Fries

Sorry if it's been recently been covered, but I serve hand-cut french fries in my mobile concessions trailer, and I am wondering if anybody out there has seen a delicious recipe I could "sample." Of all my products homemade fries seem to have the most variables when in comes to cooking and preparation. Do you double dip the fries in the oil? What's your ideal temp? Do you ever use #2 potatoes? Your advice would be golden!!

Soak your hand cuts in water with a couple of cups of vinegar, overnight, dry and par fry at 335 for 4 minutes, let cool, refry to order at 375 till nicely brown

I do fresh-cut fries as well. I don't soak 'em though, just cut and then blanch in 325 oil for two minutes, and let cool or refrigerate overnight. Oil then comes up to 375 and it only takes a couple minutes to crisp 'em up. People love 'em.
