Happy Trails from CSD

Dear Roadfooders,

Many have come to this forum with good ideas. In many cases, those ideas remain ideas. Many even get started, but then stall. Some don't know how to get to the next level and use this forum for guidance. This will be my last post on the Restaurant Professionals Forum. My business currently requires a greater time commitment. Hot Dog University was established to assist aspiring entrepreneurs the opportunity to move to the next level and offer them the knowledge, tools, and strategies to successfully launch a career in the mobile food service business. I wish you all the best in your future endeavors. Happy trails to you, till we meet again. http://www.duchessathome.com/music/happytrailstoyou.html

Sincerely,

CSD

Glad to hear you'll still be hanging around! But then as many times that I've seen you repeat yourself, I don't blame you the least for backing off.. Seems everyone discusses step 1 and rarely get to step 2. But best of luck keeping busy this summer.. Suppose to be the hottest on record, so keep the ice cream on sodas on ice... (Step 4 I beleive :) ) Be a bunch of hot and thirsty people around..

CSD, I agree with your assessment concerning how great advice is ignored. Seems some folks just like to chat or maybe have a dream about half baked or simply don't have the vision nor fortitude to get it done.
    It is frustrating.
Look forward to hearing from you on other topics.

Maybe this is a good time to ask . . . what's the big deal with ketchup on a hot dog?

I remember that line from one of Clint Eastwood's Dirty Harry movie "Sudden Impact" where he says "Nobody, but NOBODY, puts ketchup on a hot dog". I got the joke (you'll have to see the movie to understand the set up), but always wondered what the big deal was, as that's not the only place I've heard similar comments about ketchup on a dog.

Being from the South, where we put ketchup on a lot of things (including scrambled eggs), I don't find the idea of ketchup on a dog at all unusual. I was raised on cheap, red Zeigler hotdogs topped with mayo and ketchup. Loved them as a kid and still eat them that way occasionally.

That's a nice article there! Congrats! (I even sent the editor a complimentary note)...
But now back to the Ketchup on the hot dog part.. Are you sure it was an accident? I don't know... May be coming out of the closet there..

    CSD,

Sorry to see you go, being probably the newest person on this list...3 or 4 days and counting.

I did want to share, in that short amount of time, you did make a difference to me.

Maybe people talk way to much, some of us just "do".

I'll personally be purchasing my cart in the next 2 weeks. I'm just waiting for schematic approvals from the health folks.

About "HDU". I've seen some pro and some con postings about the concept. Coming from an organization that spends millions of hours in what appears to be "useless" training. I can say that I've used most every bit of training I've ever attended in one form or another. Hopefully I'll have my ducks in a row soon, and be able to attend "HDU". I'll know for certain by the third week in June.

While it may be easy to simply toss in the towel, remember.. Sometimes ya just gotta choose the hard "right" over the easy "wrong".

Best wishes in whatever you decide.

Hopefully, I'll be seeing you after the 3rd week in June.

    Regards,
    DawgNoob

Matt, Chicago baby boomers, as myself, never use ketchup on a hot dog. Yellow mustard is the norm. It's an unwritten rule. Thanks for all your positive support. I'm not leaving Roadfood. I'll continue to lurk in the Restaurant Forum and consult with members via e-mail.

I think it was an awesome article. I can't believe they printed this line though. "The hot dog is beating the sh!t out of the sausage,” he says." but I did think it was pretty funny.

Oh, and can I get a squeeze too? hahahaha just kidding

I joined Roadfood ten years ago when I was vending hot dogs from a cart on weekends at an out door shopping mall. I opened Hot Dog University in 2006 and submitted this post in 2007. What started out as this: https://www.youtube.com/watch?v=jKHtPZ7jN_4 has grown to this: https://www.youtube.com/watch?v=reG9K24aGwA Hot Dog University is based in Chicago at the Vienna Beef factory, with Roadshow (one day course) classrooms in Scottsdale, AZ and Los Angeles, California. From 800 graduates, three are from Roadfood.

Thanks to all. There really is life after Roadfood. Never in my wildest dreams did I ever imagine Hot Dog University becoming a business, that would partner with Vienna Beef and it all began with a hot dog cart.
