    Random places I'll recommend:
    For West Bound:

    Dyer's in Amarillo
    Garcia's in Albuquerque.
    Cafe Kacao in Oklahoma City
Four Way Cafe or Interstate BBQ in Memphis
    Northshore Brasserie in Knoxville

The T-Bone Steak House in Weatherford, Oklahoma (right off I-40) was a great stop for us a couple of years ago while driving out to Scottsdale. lleechef loved her strip steak and said it was one of the best she's ever had. I had the chicken fried steak and it was terrific.

And on your way back give us a shout and we'll meet you for a meal in the Columbus area.

Great. Why, you being from Connecticut I could introduce you to what a real apizza is like.

If you will be in Knoxville for breakfast, I'd recommend the French Market Creperie downtown.  If you'll be in Knoxville for lunch or supper, I'd recommend Pizza Palace Drive-In.

Nashville and Memphis have recommendations from everybody already, but I'd like to add that we just got back from Nashville and while this was not a food-filled stop, our favorite meal this trip was at Mary's Bar-B-Que on Jefferson Street.  They're open until midnight and their hot sauce is no-kidding-around hot.

Also, if you happen to be in Nashville for a weekend breakfast, give both Loveless and Pancake Pantry a pass in favor of a locals-only place like Mad Donna's in East Nashville.  They have 2-for-1 mimosas on Sunday mornings, and a Cap'n Crunch French toast that is too good for words.  Their website says they start serving at 10 on the weekends, but it's actually 9.

Loveless is a MUST.  Also, when going through NM get a green chili cheeseburger.

Going up or down I-17 between Flagstaff and Phoenix, a "Must Stop' right off the interstate is the Rock Springs Café. Weather it's just for a piece of their famous pies or a meal, It's worth it!

Actually, I preferred the other place I went to for lunch with Foodbme - TexAZ for awesome Chicken Fried Steak.

    Other suggestions:

OKC - Clausen's for a breakfast my wife still talks about.
Phoenix - Indian Fry Bread House

On I-17, if you get off the freeway south of Sedona at the Cliff Castle Casino and go towards the casino, but go left either in the turnout with the gas station or down towards the "smoke shop", there were two different tents with the local Native Americans cooking up fry bread. One served it several ways with beans and other toppings such as tomatoes and cheese, while the other did the sugar and cinnamon style that is tasty for dessert. They fry them in front of you. To me, that's as worthwhile a stop as you can make.

PS, I also bought a nice handmade Indian vase at the exit. A nice story to tell!

Cool...maybe we'll see you on Antiques Road Show. I love those fry breads. Did you ever get up to Jerome? I love northern AZ...I worked as a river guide in the Canyon way back when. Now THAT is a trip...I'm getting goose bumps just typing this. Let me know if you need some info.

I too also second TexAZ and the Fry Bread House. TexAZ & Greasewood Flat are two different kinds of joints. TexAZ is more for the food & atmosphere and Greasewood Flat is more for entertainment & people watching.
There's so many good places out here I wouldn't know where to start the list.
If you're looking for something specific, send me a PM.
