Harvest House cheesecake Tue, 03/6/07 3:14 PM (permalink)
I used to love the cheesecake that they served at the Harvest House cafeteria. It was cut in squares, was about 3 inches high and had a graham cracker topping. It was very light and had a hint of lemon to it. Does anyone know where I may be able to obtain a recipe for it? I'd really enjoy tasting it again.

Thanks!

I think what you had was Lemon Bisque, a very old dessert. It does taste a little like a light cheesecake but there is no cheese in it. I found this on RecipeZaar:

    LEMON BISQUE
1 12-oz. can regular evaporated milk, chilled overnight
1 3-oz. package lemon jello (not diet)
    1 3/4 cups hot water
    1/4 cup lemon juice
    1 cup sugar
2 1/2 cups graham cracker crumbs
Procedure: Dissolve jello in hot water and chill till partially set; then whip until light and fluffy. Add lemon juice and sugar. Whip chilled milk and fold into Jello mixture. Line the bottom of a 9x13" pan with half of the crumbs. GENTLY pour mixture into pan (if you pour too fast you will mess up the crumb layer). Top with remaining crumbs and chill till set--about 4-5 hours. Serves 12. (But not at our house.)
    Hope this helps.

      Shortchef,

Wow... you may be right! I always assumed that it was cheesecake, but I never tasted any cheesecake like it. I appreciate the recipe. I'll give it a try and see if it's what I remember.

      Thanks!!!

A Harvest House Cheesecake Recipe can be found on the Milwaukee Public Libary website. They have a Recipe Archive.
