Sorry but you really need to know how you are going to cook first, then find a suitable cart with 4 sinks. It totally depends on what you want to cook as well. Anything is possible but we need to know more of your intentions, think with your head not your desire first. We know you are excited but really slow down and don't screw the pooch before you even started.
I have to say this post is right on target. Sorry it’s none of my business but you are in too much of a rush and in 3 or 4 months you’ll be another “used to be” that wanted to start your own business.

st The health department rules are for 3 sinks plus a hand wash sink. You need to use 3 sinks and a hand wash sink. Those are the rules of your local health department and they are for a good reason.
Before you rush out and buy a cart you should have read the FAQ here on roadfood. It’s in place to help new people and Pop’s spent a lot of time on it in order to keep people new to the business from running into problems from the very start.

Start over and read the FAQ, then go talk to your health department again and go slow don’t try and jump in the middle or you won’t last 5 months.
