Hey Chicago!

The wait for my Model 650 is KILLING me!!!!!

You made it sound so good, I can hardly wait! They did gave me a completion date, less than two weeks. It will be great to get up and running. Are you having any new classes soon?

    The waiting's the hardest part. I ordered my cart in April and it didn't show until mid-July. Here's a schedule of HDU 2007 classes:

    4/20 & 4/21
    5/11 & 5/12
    6/8 & 6/9
    7/13 & 7/14
    8/10 & 8/11

    Wisconsin winters are cold, windy, and snowy, so I don't conduct classes because I value my health and want my students to enjoy a positive learning experience.

    I'm a retired public educator, counselor, and administrator with 50 years of food service experience. When I worked my cart, it was on Saturdays and Sundays from 11-4 at a major shopping mall (300+ dogs & drinks/day) from May-December and at large summer events. In 2006, I opened Hot Dog University. The cart is now only used as a teaching tool for the "behind-the-cart" training with my students. Last year, I leased my entire business, including the cart to one of my graduates.

    When you do your behind the cart training, is it out in public selling food to real customers?

    Yes. We set up at the front entrance of Stein Gardens & Gifts, a southeastern Wisconsin retail chain of 15 stores. Each store is located on a five acre site with parking for 150-200 cars. The store allows us to post a 10X4 Vienna Beef banner at the main entrance. This is a perfect training location during spring and summer. On a typical Saturday, working from 11am-2pm, students sell approximately 100 hot dogs and drinks. Not a fast track by any means, but enought to learn the business at a moderate pace. They begin setting up at 9am and break down from 2-3pm. Afterwards, we evaulate the entire process. Some discover it's their calling, while others discover it's not for them. It's an excellent short-course for anyone seeking to become self-employed.
