What are good traditional sides with slow BBQ'd brisket? I'm thinking mac n cheese, greens and corn bread. How about it?

According to Steven Raichlen's book "BBQ USA", Kreuz Market offers these sides: White bread Saltines Pickles, both sour & sweet Pickled jalapenos White onion slices Peeled avocado slices Tomato slices Wisconsin cheddar or jalapeno jack cheese slices, 1/4" thick. Brad

The one time that I had brisket down in Texas ( can't remember the place's name ), potato salad was one of the sides; I think beans was the other.

There are the usual suspects that are commonly found within most BBQ and soulful kitchens throughout the rest of the country,...the country being all states south of the Mason/Dixon Line. All vegetables need to be cooked to death. No teeth are required. The one unique dish that I knew nothing about is serrano or jalapeno creamed spinach. That is a staple at many of the places. It isn't as spicy as it sounds. Black-eyed peas or Texas caviar is popular. Potatoes, mashed, baked and salad is normal. I have yet to see macaroni salad. mark

Pinto beans, coleslaw, corn on the cob are sides I always look forward to with BBQ.

Cole slaw, baked beans, turnip greens, fried okra, potato salad, baked potatoes, mac and cheese and brunswick stew are all sides I've had. Served with either cheese corn muffins or cornbread, chow chow or dill pickles on the side. I usually opt for turnip greens, cole slaw, baked beans and a corn muffin with chow chow if I eat out. I often fix potato salad, baked beans, okra and a hamburger bun if I fix it at home. I only eat white bread with ribs and then only if they have been sauced, it's what you serve the ribs on so you don't lose any sauce. :-)

So I cooked the brisket 16 hours, it came out perfect. I fixed corn bread, mixed greens and pintos. Out of an 18lb brisket I had about a lb left over. Just enough for a couple sandwiches :)
