A new combo I dreamed up, who knows, maybe a bunch of places already have it. In any case this is a devistatingly great combo, over the top intense flavor. When I get a Pic or buy a camera, whichever comes first, I'll post my tasty design! BTW, nothing on it except meat! Anyone ever had this combo?

            I buy Cumberland Gap smoked hog jowl and it is certainly not all fat.  It resembles bacon except better with lean striped.  I use it as breakfast bacon, use it to flavor many dishes such as greens and it is very very tasty.

              Actually Micheal, after 14 hours of smoking most of the fat is rendered out of the belly, we slice it and brown the belly, leaving it almost all meat. The jowl is just like bacon, except more intensely flavored.

                Chewie, I applaud your efforts.  I had a marvelous pork belly sandwich a little while ago at a food festival.  It was served on something like a hot dog roll, with some other stuff.  I'll have to post some photos.

                  I know about the jowl. As I said, I buy guanciale to use in place of pancetta when I can get it. But I don't know about that pork belly.
