Holy Guacamole! Today is National Guacamole Day!

Today is National Guacamole Day. The word translates from the language of the aboriginal Mexicans as "avocado sauce." They were eating it and avocados--a pure American food--long before the arrival of the Spanish. Let's have your Guacamole Recipes and let's see if we can gather enough to put together A Guacamole Cookbook, even though you don't "Cook" it! Here's Mine: Ho Ho’s Cooking School Guacamole I went to a cooking school to learn Mexican Dishes. This is one of them. 4 Medium Haas Avocados 2-3 TBSP Minced Red Onion 1 Minced, Small, Seeded Jalapeno 3-4 TBSP Fresh Lime Juice 1 TBSP Olive Oil Salt & Pepper to taste Mix all together, cover with Saran Wrap so no air gets in and refrigerate for at least 2 hours before serving

Hooray! It doesn't have cilantro. Can't stand the stuff and it seems to be every body's favorite, so it is in everything.
