Today is National Guacamole Day. The word translates from the language of the aboriginal Mexicans as "avocado sauce." They were eating it and avocados--a pure American food--long before the arrival of the Spanish.

Ho Ho’s Cooking School Guacamole
I went to a cooking school to learn Mexican Dishes. This is one of them.
4 Medium Haas Avocados
2-3 TBSP Minced Red Onion
1 Minced, Small, Seeded Jalapeno
3-4 TBSP Fresh Lime Juice
1 TBSP Olive Oil
Salt & Pepper to taste
Mix all together, cover with Saran Wrap so no air gets in and refrigerate
for at least 2 hours before serving
