Homemade Beef Jerky

My kids love beef jerky so I decided to make some at home last weekend. With all the london broils on sale right now, it was so much cheaper than store bought. I marinated it in a soy sauce marinade I usually make up to do wings. My family ate it all in one day!
 

 

 
What are some of your favorite seasonings for making beef jerky? I've looked up many recipes but would love to hear from fellow roadfooders.

    Great photos, and I bet this thread will be popular...
    I loved making beef jerky and would give out a couple of pounds worth to family for Christmas.  Well, I started with a couple of pounds before it dried out.
    I think my focus was on teriyaki but if I was to make some now I would probably go for a heavy cracked black pepper style.  I suggest you use any gas station cash register area for inspiration. It's a jungle out there...

    Also consider visiting a Asian grocery for ideas ranging from sauces and flavorings. There are variations of dried everything in those places.

    Thanks, Mark for the input. What a great idea for gift giving! I did these in my oven. Do you have a dehydrator? I was wondering if it's worth it to get one.

    There is no reason for buying a dehydrator, your oven is perfect and that is how I do them.  Consider buying extra shelves so you can make alot.  Keep the oven heat as low as you can. You may have to rotate things as time goes by. It seems you did a good job. ***
    One other thing to consider is making dried tomatoes the same way. They make even better gifts.

    ***added to say that you should freeze the meat just enough so that you can make easy thin slices.

    I made beef jerky once when I had my Cookshack smoker.

    I decided it was easier to buy it because the final product was just a small amount of beef as compared to what I put it.  It depressed me!

    Yours looks great!

    I used teryaki with a garlicy Island hot sauce.  Hot and good!

    I know what you mean, large piece of meat and small pile of jerky. I think my son just walked through the room and inhaled half of it in seconds. I should mention, though, that my son and daughter were really skeptical until they tried it. They should know by now that if I set my mind to it I can replicate any recipe!

    I bought a 10LB London broil and made jerky one time and our son and his friend inhaled it in a half hour. What I do to keep this from happening now is I make it very spicy.

    yeah for spicy! i do it often with soy sauce, lemon juice and sriracha hot sauce. pretty much anything goes for flavors as long as you've got the salt (soy) and acid (lemon juice, lime or vinegar). that and lean meat and you're good. ginger and/or citrus zest is good. venison rocks if you have access to it. as does shrimp. my family likes any jerky best if i take it to a leathery consistency rather than crispy.

    I marinate it after I cook it, cooked with lots of granulated garlic on it, marinade is soy, Parmesean cheese, hot sauce, wor cestershire sauce

    I think I offered in the other Beef Jerky threads......I used to have a small Jerky company.....

    I'll send anyone who wants them my marinade recipes.......I've scaled them all down for 4-5lbs of meat.

    All soy based and with the exception of the extrememly spicy version all of the ingredients can be found in a common grocery store. PM me if anyone would like the recipes....

    Absolutely, and if you have problems maintaining low temps, just turn off the oven and use a light bulb in the bottom of the oven to maintain a very constant low temp.

    We usually use a mixture of teriyaki, soy, crystal hot sauce, crushed red pepper.  Marinade over night.  We use a dehydrator, can't stand to clean it though, but I can't stand the thought of using my oven for extended hours even if on low.  My power company loves it.....

    I agree, I use a dehydrator as well and hate cleaning it. The trays are to big to fit into my dish washer. I like that it can transform 5 lbs of marinated beef into about 1 lb jerky in 4 hours.

    yea, but you still have to scrub the trays. After 4 hours the non-stick spray itself gets sticky.

    When done, I put my trays in the sink with some hot, hot soapy water; rotate them around a few times and then scrub with a large nail brush. They seem to clean up nice and quick.

    I'm trying to picture this car wash scene, plastic trays flying everywhere, finding a fool to hold them????  Standing on them.....how'd you manage that?

    It was an older Dehydrator with the stackable round trays......I'd stack 13 of them up, then I'd start at the top with the spray pointing down through the trays.

    After the first one was clean I'd flip it over and clean the back side and then start stacking them up in a "clean" pile, then I'd rinse them in the same way... 

    The water pressure held them all in place....not saying there wasn't a hiccup or two every now and then, and I did get wet...LOL, but I found it was the quickest and easiest way to get them clean.
