Homemade Mustard

I've been making my own mustard for some time now, some bad, some good. Anyone have any tips or sources for more recipes ? I get my mustard seeds from Penzeys ( we have a retail store in town )and we have a recipe book but we're looking for some new challenges.

I've mixed up some Coleman's from time to time, but never from scratch. Sounds like an interesting project.

Get ready to burn all the nose hairs out. 2 oz ground mustard seed 1 tsp sugar stale beer mix ground mustard seed and sugar add stale beer drip by drip mixing till you get the consistancy you want, put in a Frenches mustard bottle for the grandchildren to put on their hot dogs, watch and giggle your ass off. Most of the recipes that I've been using involve whole mustars seeds, a combination of yellow, brown and/or black, and vinegar. Two days of soaking, then cuisinart with whatever you are going to flavor it with, like roasted garlic, or thyme.

This is a mustard similar to a hot oriental mustard, the Frenches mustard bottle was for a joke, it is very good on egg rolls, corned beef, if you like it sweeter add more sugar, some Duck Sauce, or maybe some crushed red peppers, it is all about your taste be creative, How did I or Adjudicator ruin the receipe, this is about experimenting, have fun. Your are right it is alcohol abuse, even though it is stale beer, which I could drink, like the ones sitting by my computer, filled with backwash. LOL, Mitch

you probably know this already - if you mix Coleman's dry mustard with ice water, you get a very hot mustard similar to the Chinese mustard served with eggrolls.
