I don't like tomatillos uncooked.I do't know whether you'd call cooked green sauces salsas, there's a fair bit of information in this thread...http://www.roadfood.com/Forums/topic.asp?TOPIC_ID=378 I like to make a tomatillo, avocado, pepper stewed mix; the heat depends on which peppers you include.

No recipe per se, but I would suggest getting a small can of mild green chiles from the supermarket (Hatch has a brand among others) and mixing your own with onions, perhaps garlic, cilantro, diced tomatoes, corn, or whatever you like. No tomatillos!

Thanks for the suggestions. This is actually to add to a slow-cooker chili verde recipe, which calls for canned green salsa. I always think it tastes just a little like the can, although the finished product is really good. I just thought it might be fun to try making it "all the way" from scratch! thanks....

Take the above recipe, but roast the tomatillo's on a grill. Grilling makes vegetables so much more delicious. Roast the garlic too!

4-5 good sized tomatillo peeled 1-2 jalapenos cilantro half small white onion 1 tooth garlic salt to taste In a pan boil the tomatillo, jalapenos, onion, and garlic for about 15 minutes or until the tomatillo is soft. Combine the tomatillo, jalapenos, onion, garlic, cilantro, and some salt into a blender and mix until it is at the consistency you want. * edited here to add: make sure you put some of the water from boiling in the blender as well. Keeps the salsa nice and warm!* I prefer thin salsa verde to thick. You can also add some avacado for a different flavor.
