 Horseradish recipe's?

I just got the worst news in quite some time. My beloved Royal Bohemian Nitro horseradish is no longer being made! For those who've never had it, I can only descibe it as, "Remember the hotest wasabi you've ever tasted?; triple that and you've got roughly the right idea"! I've had other "super-hot" types and nothing comes close. Can anyone give me a good home made recipe? I'm about to start searching the seed catalogs to find horseradish which I'm guessing comes in plant form. Growing tips? Sun? Shade?

    I've tried making horseradish a few time, using a box grater. There's a local farm that grows it; I haven't grown it. Grate it up, add some vinegar and salt. It's some tough stuff -- don't get you nose too close to the bowl!! Other recipes say to use a blender or food processor. You got a clogged head -- fresh horseradish will take care of it, for sure. Google will get you some recipes.

    Many years ago, there was a guy at the Columbus Farmers Market in New Jersey who ground horseradish on the spot. Some good stuff.

      I make fresh horseradish every year for Passover. I use a food processor. I add white vinegar, but I've never added salt. Be extremely careful as you open the bowl of the processor - I had someone 15 feet away across the room start to cry when I opened it up. Excellent!

        I forgot to mention. The Columbus Farmers' Market guy had a glassed-in booth. Municipal code or something, maybe....

          Good luck. I love horseradish but have only grown it, when I lived in upper peninsula of Michigan, where it grew well, and wintered over, under the heavy blanket of snow. Let us know how you do.

            Wow, thanks for those links! It would appear that if I plant sometime in April, there is only a slim chance of a harvest this year, but then I should be good to go. Shipping costs seem a bit high at most places I've checked, so I'm probably going buy some from Jung which has a store just outside of Madison. Thanks so much. I wish that anyone that enjoys hot dishes could have tried the Royal Bohemia Nitro. It really was a special product.

                I remember buying freshly ground horseradish at Eastern Market, a big farmers' market in York, PA. The guy grinding it had a big fan blowing the spicy air away from him. That is my suggestion to you, too. I love horseradish, too. Good luck!

                  Since I am sure that there are farmers in that area that are growing it for Silver Springs, I am willing to bet that fresh horseradish root is available in farmer's markets and better grocery stores in the Eau Claire area. It would probably be worth a road trip.(This could save you from dealing with a lot of the problems of growing it.)

                    I see horseradish root in the produce section of Kroger quite often.

                      When I grate fresh horseradish I do it outside, in case it's a particularly strong one. I use the finest grater I've got, I actually think one of those microplanes is best. Like Gordon W, I add nothing more than some white wine vinegar and salt. It keeps it fresh (if refrigerated) for months.

                      If you plan to grow your own, make sure the soil is well worked with lots of compost and drains fairly well. Being a root crop, it will grow all convoluted in rocky soil and will rot in overly wet soil.

                      PS. I like the jarred horseradish grown in Tule Lake, CA. It's the real thing.

                        Hello All,
                        MilwFoodLovers, you have my sympathy. Years ago I feel in love with Dockside Horseradish Sauce, and they disappeared.
                        I have tried to find it, but can't. Tried to reproduce it, but can't. No one makes anything like it. So now I settle
                        on second bests.
                        Kroger was the place I found Dockside, and will always be grateful to them for that heavenly experience and the memories
                        of that horseradish sauce.
