Hot Dog Spices

I am thinking of making my own Hot Dogs W/Natural Casings. Anybody out there know what is the best tasting spice to put in the mix? I have been told that cardamom or mace is good but has an after taste.... and I would prefer a milder spice. How about garlic or onion? In New England, Jordans uses nutmeg (not so good). Anybody know the spice in Thumanns or Kirshners? Thanks Hot Dog aficionados! Dale R.

Dale, You might like to add some Old Bay Seasoning. That's usually used for crabs and the like, but in homemade hotdogs, it would make them unique. You ought to try it on something else first to get an idea of the proportion to use, natch. Let us know how it works out. Uncrabbily, Ort. Carlton in 30601-land.

I know that garlic and paprika are primary spices in New York deli style hot dogs, along with white pepper, and a good deal of salt.

I have heard the same thing, although I haven't sampled them. A friend of mine went and said that the sauce has a weird taste, unlike anything that he's ever tried. He seems to believe that it's an aquired taste.
