I was in Chattanooga this week and stopped at a small place called Griffin's Foot Longs, just off Rt 153 at Shallowford Road. That's all they served; foot long dogs and italian sausages. They steam the buns and dogs. My dog was a red color, and since I am not a relish fan, I got relish on the side. I don't know what to compare it with since I've not had relish in years, but it was mighty good and tasty, not sweet.

cp, is it possible it was dill relish? I am not a fan of sweet relish, but I love dill relish. In fact, I make a pea salad with canned peas, shredded cheddar (or finely-cubed American singles) and dill relish (no salad dressing of any kind).

Quite possibly, 6star. To me it just looked like tiny pieces of cut up pickle with something to make it unsweet. I really have no experience with relish. The recipe you mentioned sounded interesting.

I Love Niro's Gyros; they truly do have the best relish. There's a Niro's Gyros that just opened up in the UT Campus Area in Knoxville, Tn and their food is great and the prices are awesome. It's a must check out :)

My favorite hot dogs come from the Chicago Area. They use a particular relish that is bright green and is not available in Knoxville, TN. What and where can I obtain that relish?

Just add a little green food coloring to your existing relish. It doesn't effect the taste and it looks just like the expensive stuff.

              salt
              vinegar
              sugar
              alum

              sodium benzoate
              sprice
              polysorbate 80
              xanthum gum
              Blue No. 1

Denny-Boy, green food coloring is not used in Vienna Beef neon green relish. It's Blue No.1. There's only one authentic neon green green relish and it's made by Chipico (Chicago Pickle Company). Chipico is part of the Vienna Beef Company with two pickle plants. One plant is in California and the other in Florida.

Here is my favorite relish recipe. It is most likely too expensive for serving on a cart. I also know it is not Chicago Relish. I like some heat and alot of people do. It would be considered just above medium. I took alot of the Chicago Dog ingredients. I think it is an excellent Relish.

1 entire large cucumber skinned, seeded and diced fine
7 jarred hot cherry peppers diced fine
5 Vlasic Whole Refrigerator Kosher Dills diced fine
3 medium jalapeno peppers diced fine (seeds and ribs removed)
                    1 medium onion diced fine
                    3/4 teaspoon celery salt
3 tablespoons juice from sport pepper jar
                    2 tablespoons juice from pickles
2 tablespoons juice from cherry peppers

Then I mixed it up. It might sound a little wet but the fresh cucumber and onion absorbed most of it and kept it from turning brown. All products were refrigerated prior. Including the fresh Cucumber and Onion. I think relish should be cold instead of room temp....Russ

If they didn't put those preservatives in there, the stuff would turn green.
