 Hot plate steam table

I have hot plates in my trailer and have been using double boilers to keep food warm.

Question - Has anyone used a spillage pan with steam pans over a hot plate? Would I need to put the spillage pan on a flat griddle or something?

    I can't imagine what your talking about what in the world is
    a spillage pan?

    PS why are you using a hot plate when a portable or counter top
    steam table is only $100.00? Or for that matter a roaster is
    only $39.00

      I don't see why you couldn't use a spillage pan filled with water and inserts on a hot plate, but I'm with the previous poster. Why would you want to? Here is a link to the cut sheet for a APW Wyott countertop warmer:

      I paid around $130 each for these last time I purchased them. The problem with your spillage pan idea is that you will be wasting a lot of energy. The heat your hot plate is putting out will be diffused out the sides under the spillage pan, and out through the pan itself. This food warmer is insulated, keeping the heat directed towards the food you are tying to keep hot. Also, less heat energy wasted into the air means your serving area will stay cooler. Cooler air is good for anyone serving the food, as well as for the efficiency of any refrigeration units you may have in the area.

        I'm trying to save money and space and be frugal by utilizing the equipment that I have. I also want to use propane not electric.

        I'll have to think of some way to insulate it.

          Yes by all means use the spillage pan, Put enough water to float pans. Make sure you have a plastic pan in your arrangement, to see the water level. Adjust your heat accordingly and add more water when needed. The Cart I got did not have a spillage pan, I added one and it fits in my opening. some carts use direct flame to pans and burns the foods, with a spillage pan you get a good temp all day.
