House of Nanking

The key to many good restaurant reviews is in the sentence, "When the time comes to order, ask for the owner, hand the menu back to him and say, 'I trust you.' The chef will prepare for you a culinary party on a plate."

This was true in the Ho-Ho (Chinese restaurant) in Bells, TN, in 1982 and it was true at Arnaud's (NO, LA) in 2006.

Ingratiate yourself, honestly and without false humility, with the staff and they will take care of you.

Conversely, when I get a bad meal, I've always wanted to call over the owner and ask, "Would you eat this? Would you serve food like this to friends at your home? If you eat this and considered in good, than I have no complaint."

(The only time this ever worked, by the way, was in a small restaurant in a tourist-y town in New Hampshire. I stopped in because it said "Brewery", but it was just a name, they didn't brew beer or even have much of a selection but they did have "real" BBQ pulled pork. Well, the menu said they did, but the stuff on my plate was 100% fat, no pork at all. He actually apologized and took the total cost off my bill.)

I love both tips but hope I don't have to use the latter one.
