How is everyyone doing in the Early morning menus?

Hey all: was wondering if anyone has been testing an early morning menu? There are so many creative people on this forum that maybe there is a certain item or simple recipe that someone has had success with? Just trying to get some new ideas on the forum... Thanks.

We are doing one at our up coming event, sausage on a bun, biscuits and gravy, I am thinking about an egg benedict sandwich, hollindause on side. grilled peanut butter and jelly. Hard Salami McMuffin style is killer with mayo..mmmmm...we like our mayo down here in the deep south...maybe a breakfast burrito or quesadilla..many options, there is no limit, plus, I get up very very early, I am ready for food food by 8 or 9 a.m....I just keep saying, give people an option, think outside the box, get people out of that hum drum dull routine..they will go for it,,up sell up sell sell sell sell If you like it and believe in your product, it will sell..no matter who says..." That won't fly.."

Only did B'fast at two events a year. B'fast wraps(scrambled eggs,taters,onion,peppers) and biscuts and chocolate gravy did well.

Many of the festivals we set up at don't have any breakfast items. In most no one even offers coffee! Usually if there is anything, its a breakfast burrito. Offering something different would put the vendor ahead of most others.

Our very first event, was Oct 17th at our VW car show...FREEZING COLD and windy...especially for Florida...I served So much coffee, and hot chocolate...our next show is at the Snow Ball Derby, Dec. 2-6th we are in the pit at the track and the only one servering breakfast..OH MY..we are searching for urns and airpots..I have worked so many places through the years, where we have had people just brewing coffee..I think it is going to be that way..I hope..

We have a B&M so we are able to offer a bigger menu. We offer 3 kinds of Omelets, Eggs to order, scrambled eggs on line, hashbrowns,bacon, country sausage,French toast, Blueberry pancakes,Strawberry waffles,Chicken fried steak, country gravy, buttermilk biscuits, Breakfast burritos, Chorizo Papa's & egg Burrito, 3 kinds of Breakfast croissants, Biscuits & muffin sandwiches, Hashbrown patties........Bill

Good Gosh Bill: Sounds like you have your own little "waffle house " goin on! I just wanted some ideas that does not include eggs. I have a griddle plate 12 x 20 so I can do a lot but only if it is a pretty good seller.. Thanks for the ideas all.

Hey Deputy, I like the Breakfast country dippers, Its two biscuits, two country sausage ( precooked) and a cup of country gravy....They also make a egg patty frozen that could be heated on the grill or just in the steam pan. The egg patty opens up for other breakfast sandwiches. Another item that holds well are breakfast burritos using the precooked sausage, egg patty, cheese, hashbrown patties chopped up and grill all together. The Hashbrowns are a great filler. wrap in foil wrap and hold in steam table....Good luck...........Bill

I used to have a small concession in a baseball card mall in Qtlanta several years ago, I did all kinds of biscuits, bacon, ham red hots B&G, egg and any combination of the above, and did a couple hundred a day in that limited draw situation, but regs were a lot different then.

For sure... all sounds fantastic except the "eggs" for some reason here in Nevada the HD shivers at the thought of eggs on the griddle!!! Guess there aren't too many farmers in this state, or at least employed by the state department.

eggs scare a lot of health departments, a few years ago there was a huge scare over sunney side up eggs if you remember, and I may be wrong but I think eggs are the nations #1 poisiner. but all the fast food restaurants do it, so after they turn your eggs down you might mention their next trip needs to be to Mc donalds. It is not good to get confrontational with them though it will only hurt you, try the can you help me aproach, it will ysually turn the heart of most any beaurocrat, thats why they exist. Reguardless of what they think, they are supposed to work for you and with you not against you.

Agre 100% old dude. I think they tend to forget that themselves most of the time.... I am meeting with him on the 1st so I will run that thought by him and see what his attitude is. I am going to look for some pre-cooked country gravy to put with the biscuits and sausage.... Any ideas???

2-20# bagged eggs pasteurized w/citric acid I use these on my line in a Cafe. They hold very good in a steam table and we also use them for omelets. 120- 1.5 oz Egg patty Rnd Micrfrsh CN 25.92..........I use these for all of our fast & Go Breakfast menu items. Breakfast muffins, breakfast biscuits, breakfast croissants. they work well, hold well and are easy to get fast. They will also stay warm in a steam table to prep as you go................Hope this helps...............Bill

We're doing the "McMuffin" thing using fresh eggs and choice of ham, sausage, or bacon. People love the taste and look of a fresh egg. we scramble all eggs on the flat top inside egg rings unless specifically requested not to. We also offer them "western" style with shredded onions and green peppers at no additional charge. We serve them on a store brand premium english muffin which have an airyer texture than their cheapest muffins. We charge $2.75 plus tax and they sell well.
