How much food for Events

How much food for Events

 I have 2 events comming up.  These are my first events so I am looking for advice for the rest of the Hot Dog Guys(and Gals) Jedis.   What is the % of people do you plan on stopping by when you have events?  Trying to figure out how much food I will need so I don't have to send someone to Sam's or Costco ever 10 min.

    I did a couple of auctions for $150 gross, then the auctioneer said she had a bigger one coming up. I bought more stuff for the next auction. By 2:00 PM my wife had gone back to the market two or three times for soda, dogs, buns etc. We did $556 that day.
     
    Last saturday my commissary is a catering service  for parties, wedding you name it. She has a big parking lot and was catering a Veteran's sponsored car show. She thought she wouldn't be able to handle the crowd and asked me to come help her out. I loaded a bunch of stuff into the van. I sold $75 had to find a freezer for 90% of my dogs. I was so disappointed I left stuff that I forgot all about and it spoiled in my van. This is a very tough business to figure out. I would not take bunches but have a step and fetch it with a fast car to help me out by running to the store. Be careful. It a big guessing game.

    I read somewhere about the 10% rule. I think it all depends on your location etc. 

    We did a festival a few Sundays ago but we set up outside of the festivals limits. Right across the street in a major pedestrian flow to and from. I sold about 280 dogs, some soda, water and a few chips. I had brought 380 dogs so 100 went in the freezer. The festival draws around 40,000 people.

    For us newbies it's all a guessing game so just go with it and have a plan if you need to get more food. I had a couple friends on standby who were willing to run out if I needed.

    one is a 2 day car show outside of a county fair the Friday show is at night 3pm-11pm the Sat. is 9am-7pm my other event is a week Mon-sun its a cowboyshoot/rodeo and that is all day
