How much will I sell?

I'm getting closer to my first day. 2-3 more weeks for all the paper work. I'm trying to figure how many dogs I can sell too 400-500 walk bye's. Theres auto and truck traffic as well, but any thoughts on the 400-500 walk bye's?? Most will be taking time away from there day to be there (background checks), so I'm thinking they will want to get some food fast and get back to work.

You never know. Do you have a way to keep product frozen? I would start with 40 dogs thawed and see how it goes. I always try to keep 40 in my pans steaming and ready to go. It depends on how many hours you expect to be there also. My hours on my menu say "10:30AM till' sold out". I'm was there 8 hours last Saturday before I sold the last one(160). Have another 40 thawed but on ice ready to go. Same with buns. If you know how well your cart performs you can always up production if the herd gets thick! My cart can steams buns and dogs quickly, even from a semi frozen state. Get some thermometers. What brand of dogs/buns are you selling? Arnie

Thanks Arnie, I hope you have a great weekend!!!! I do have a freezer. I think based partly on your advise I will take 60 thawed and 60 frozen. I like to think big. I still have a few weeks before all my paper work is done, so I may make adjustments before then. I'm sure no matter how much planing I do the first day will be an eye opener. Can't wait!!
