Good morning together , after I had already mentioned in a Thread, I wanted to make myself independent with Hot Dogs in Germany ,I`ve done this now. Now however the question arises, how I warm up the Buns in the Bain Marie. The pushcart is from All American Hot Dogs, later I`ll show some pictures Tx

Using an All American, I'd just keep the buns in the storage area above. Trying to steam and warm them will cause you nothing but headaches (That and stale tasting, hard buns). Been discussed many a times here.. (Heat will cook your normal buns and make them nasty and hard). Unless your using the proper style buns (S.Rosen I beleive, keep them away from the heat)... Mr. ChicagoStyleDog will tell you about them puppies.. (Or you can reach him at www.hotdogu.com) or do a further search here in the Hot Dog topics area..

TK, if you're serving a hot dog in Germany, why not use the buns the locals eat? Find a local baker or bakery for your product and purchase it fresh daily. If the bakers don't use preservatives, the buns will have a very short life, so don't over buy your product. There's no need to be steam or heat a freshly baked bun. Steaming a cooked bun will ruin it. CSD
